Oyster sauce is a main ingredient if you want your kids to eat vegetables. Put oil in the pan, put miced garlic, stir at low/med heat until the aroma is out. Put your greens, put a bit of water, let the steam works to "cook" the vegetables, put oyster sauce and diluted-in-water tapioca to thicken the sauce. It is not how it should be cooked but I am lazy to wash dishes, so everything is done in 1 pan.

Absolutely. Also, you can add a little black vinegar to balance out the sweetness. It's one of the best shortcuts I know to deliciousness.

​@droptopp3479 not just stir fry either. Baking and grilling. Marinate some ribs, chicken, steak , etc in oyster, sugar and garlic powder. That's it. Let it marinate over night if you can.

My only complaint on this wonderful video of multiple examples of oyster sauce is not having Leo as I needed the onomatopoeics of each bite and then a very verbose description of each trial. Leo, you the man! As is everyone else but the enthusiastic verbosity you bring to the table is awesome

Prob wont ever happen because the amount of time and care he puts into making the right steak wouldn’t translate to a restaurant. Restaurants are fast paced and everything has to be taken out fast, and you cant afford to take too much time into each individual steak when you have to cook 25 steaks with different temps on each one.

Crazy because oyster, sugar and garlic are what the base marinade for my in-laws(Laos). I just Marinated 4 cheap new York strips and forgot them for 3 days. Almost tasted dry aged. Definitely more beefy. It was like a speed wet age.

I've been marinating our steaks for over 30 years with oyster sauce. We've never dry-aged but we marinate for at least 24hrs. We add garlic powder (generously) into the marinate. We shake excess sauce off the steak but we don't clean it of all the sauce. For a medium rare steak, it does not burn.

Do you do pure oyster sauce like Guga did? Or do you do a bit of a mix? Do you dilute with some water as well? I'd like to try but am a little wary about the cost... oyster sauce can start to get pretty expensive if you're doing for one-offs like steak.

​@@painpeko8805 you can cut it with neutral oil like non virgin olive oil or vegetable oil for a marinade. you can also add whatever spices you want, just be careful because onion/garlic powder & sugars burn easily. water will work but it will dilute the flavor so watch out with that, same applies to oils but its less obvious.

@@painpeko8805 oyster sauce is thick enough that you don't need a lot. You could probably make do with just a couple tablespoons spread thin with a knife or spatula to cover the surface and then chucked into the fridge overnight to cure

If you’re a aquarium guy like me, one of first thing you’ll notice is guga using a rimless looks to be 10ish gallon fish tank to marinate the meats. Each tank maybe 100$ from where I’m at. Just something cool/funny I wanted to mention.

To be fair, oyster sauce is a super versatile sauce in Chinese cuisine. It can be used for anything, like a marinate or seasoning in cooking or even just eaten as plain sauce. Oyster sauce goes with anything even vegetables, so as a Chinese watching this I'm not surprised with the results. The sauce is delicious on its own. You can literally boil vegetables (cabbage, gai lan or even broccoli) in water, and then just drench them in the sauce and it can be served without any further cooking. It's simply that damn good.

Please, try a steak receipt from Madagascar. You just need to marinate it in -Soy sauce -Oyster sauce -fresh grounded ginger -fresh grounded garlic -honey -salt -black pepper Let it marinate overnight. Best steak ever had in my life, and i have traveled almost everywhere 😉🎉

As an Asian, the easiest sauce to cook with is oyster sauce, I cook it with vegetables to make veggies taste good. I feel like you can experiment more with oyster sauce, like soaking then smoking it into smoked salmon or jerky too

Hey Guga love the content and experimentatioin! Without you I wouldn't be able to make the steaks I have today (including A5 Miyazaki). Thank you and the team for going through lengths to provide such feedback that allow me to venture into my own curiosities with boundaries from your experimentation. As we all know you like to dry age and go beyond limits. I think you could even dive into other culture's dishes and give it your own twist! Try cooking steaks with (sheep) tail fat (Turkish: kuyruk yağı). It’s what gives “kavurma” its unique taste in turkey. I’d like to see what you think about it. Great video as always dude. Keep it up.

You wanna be blown away? Try "Make It Meaty" It is like MSG but different. It is disodium inosinate and disodium guanylate, which are sodium salts of different amino acids responsible for umami flavor. I highly recommend trying it with msg.

Just buy Knorr beef bouillon powder. It has all three sodium salts and you'll save yourself 90% over Make It Meaty.

@@texasflooring You're right, it does, but it also contains other ingredients. That is worth trying though, as its own experiemt, but pure flavor salts are more versatile. For example, Guga could use it to enhance his rub or create entirely new sauces or seasoning blends without changing the flavor profile entirely. One jar of the stuff is about half the size of a jar of peanut butter and it only takes a tiny pinch of the stuff, so you can get a lot out of one jar.

Also, it should be added alongside salt, not used to substitute. You'll still need to add salt. Last few dishes I made using a msg/dsi/dsg blend I ended up not adding enough salt, you will definitely notice the absence. Drink plenty of water if the sodium levels are a bit too high for your comfort.

The oyster thing reminds me of a Louisiana classic. The Carpet Bagger Steak. It's a filet stuffed with blue cheese and covered with oysters. Don't know how this would work into an experiment, but it's great. Try it.

i understand youre coming from a positive point of view. but i hope that never happens. i never trust netflix to do it right. guga is his own boss and he can make whatever he wants and has 100% input in how he wants his videos. with netflix, that wont be the case. there are countless stories of netflix producers not listening to original creators and want to do things their own way.

Since a tub of oyster sauce is expensive, might I suggest soaking your meat in a ziplock bag instead? Same effect, but you can get full coverage with far less sauce. Not only is it MUCH cheaper, but it also takes up less space in the fridge. It's also easier to rotate your meats to ensure even coverage, since you can just flip the whole bag, whereas with a solid tub, you 'd need either a lid or tongs, and flipping it with a lid is a lot heavier.

@@anythingoriginal I had considered that, but not everyone has a sealing machine. Also, not all vacuum sealers work with liquid. You can get around this issue by freezing the oyster sauce, but then you're already using a bag or solid container. If you have a sealing machine that works with liquids, however, vacuum sealing definitely works.

before watching the rest. i use this in fried rice all types chicken beef shrimp pork. I use it in cheap noodle cups bowls. I use it in bbq smoked chicken mixed with bbq sauce and soy sauce over rice. I am excited for this one. Might be my first comment ever on this channel.

So, given this "dry aging" consisted of leaving the meats submerged in a liquid, I have a question: What's the difference between dry aging and marinating?

Dry aging is done with things that have a lot of fat and can stand to lose moisture, wet aging is done with leaner meats to keep moisture in, and marinading can be done to either meat to keep juices in and flavor it. Marinades are liquid and involve fully submerging the meat whereas dry aging can be done in exposed air, like the dry aging machine Guga has

Oh no… I noticed the big tub of oyster sauce at 0:59 used is the red label panda oyster sauce. It’s mostly salt, really cheap, and completely cannot compare to the bottled oyster sauce that’s shown at the beginning of the video…
