I love hearing your rooster crowing. I had 🐔 chickens and I would let them out to the yard. I loved my chickens. My husband passed away and later I sold my place and moved to my daughter's house. The chickens I had I took with me and their house. They are all gone now. She has now gotten a few more.

I just LOVE gumbo of any kind, especially shrimp and crab since shrimp is my favorite food. I had been fixing gumbo for about 10 years for my newlywed hubby and after all that time, he came out and told me that he doesn't really care for gumbo (he's from Shreveport and his mom never made it). I was heart broken! So, after saying all that, I could watch this video over and over because I feel like I'm having gumbo with you!! Thank you for all that you do to represent us Louisianians!! I'm transplanted here in Pineville from Lake Charles!

My husband made Gumbo just like this! I would always help chop everything and I would say “ honey are you sure you’re not getting that roux to dark?” He would say “ no it’s fine” and you know it was! He even carmelized his sausage like you did! My boys both make it but I’ve never tried! So glad my boys cook and they’re good cooks, but not as good as their daddy! You may have to scoot over and let him help you when we all meet him in Heaven!

@@amyslouisianakitchen Amy, when Jack was on hospice, he got up out of bed and made Gumbo for the nurses that came to the house! I did most of it under his direction! He had pulmonary fibrosis and drug his oxygen all over the house! He didn’t let much stop him! Oh how I miss him! He had to retire from Pastoring because of his diagnosis! We had six or seven good years before the Lord called him home!

I made your lovely gumbo and I made it from scratch like you do. Even had fresh bay leaves from my indoor tree. And had the file', oh so good, thank you for the recipe. Man it was good! I am making your gumbo! I have made the rue and it is dark but not burnt. I cooked my sausage to caramelize and put my veggies in the rue, cooked my chicken, and put in the seasonings. I'm not thru yet but I think it is going to be good.

I know they say you can find good gumbo here in St. Louis, but I disagree. I had it from my cousins family who live in Lake Charles, none compare. I am going to make yours. Amy why have you not cooked anything since gumbo? Miss you. I’m thinking about getting on here and doing what you and Brenda Gantt are doing. I’m 75 years old and a pretty far good cook myself. But you have really inspired me to cook. Only thing is, I get on here and cook I don’t really have anybody to eat all of it and as you we’ll know, it cost a lot to cook and I’m on a fixed income. I had twin sons who are probably about your age, but one of them passed away recently and it has been so terribly hard. Something you can’t see it will get better. I’ve lost parents and a brother and numerous friends but there is no pain like the pain of losing a child. But I sure do enjoy you Amy. So wonderful to see somebody who has a great marriage. It’s so easy to see how much you love your husband. I used to live in Diamondhead, Mississippi. Just a few years. My husband was working temporarily there doing the engineering on the gaming boats. I am by myself now. Gets lonely. Hope to see you on here again soon!!!!

Homemade is always better. I usually make mines the 1st weekend in November. Freeze it and eat it for Thanksgiving and Christmas. Still have enough for New Year's.

I picked some sassafras leaves a week or two ago. I am letting them dry and then I will grind them. I just can't wait until next August! Hi Amy...I love watching you and your videos. I also LOVE your stories. You remind me of a younger Brenda Gantt, I know you've heard of her by now. You're so pleasant and full of energy and a woman of God which I love. I live in Florence, SC. The gumbo looks so good!! I have never made it. I've made soups, stews, etc. but never with the chocolate colored roux. I am retired so I can use all day to make it.....lol. I have a question for you. You talked about freezing celery which I've never done. You freeze it to use just in cooked dishes? You wouldn't frozen celery in for instance chicken salad or potato salad, would you? You were trying to describe shelling or shucking your garlic. In case you haven't thought of the word, I think you were looking for peeled.....lol.

Hey. Thank you for watching. Yes I tell you when you are staring at a camera sometimes I just cannot think of a word. Lol. So frustrating ! About the celery I do just chop it an freeze only what I cook with. I don’t think it would be good in a chicken salad because it does change its integrity a bit when frozen. But of course In dressing or soups or casseroles it is just fine. Thank you for all your sweet comments😊💜

Did you put the whole chicken and all of those thighs in the Gumbo? Do we need THAT much meat? What could I do at this end point to make it thicker? Corn Starch? (I want mine like a gravy I think) You were talking about the Bay Tree, My aunt and couson lived in Ruston and they had a Pomagranit Tree, is that more hardy? My family is from The very Northern part of Texas and I was only able to see them every 3 to 6 years.

I just finished making this I sure hope it’s good. I woke up with a sinus infection so I can’t taste anything. I’m gonna freeze some for later so I can enjoy it also. My 3yr old and 1yr old love it

Amy, why don't you use a food processor or small chopper to do your vegetables? Saves a lot of time. Been wanting a good gumbo recipe. Thanks for doing this. Amy, wish I lived close to you. I can tell we could really be friends. What part of LA. do you live?
