Hi Matt if you put the pastry dough in the fridge before you start using... do you leave it out to get back to room temperature before you start rolling it out to make the pinetart or black eye cake? I want to make the black eye cake but I am super nervous 😃. I made pinetart and it was great... it took longer in my oven almost 35 mins at 350f Your black eye cake looks amazing... I want to try! Also can you make cheese roll with that all purpose pastry dough? Thanks cool dude Matt!

Very nice ,Matthew! Thank you for this! Is that about a tablespoon of filling you used? And what was the amount of peas you used before you soaked them? Or was it one cup of dried peas that you soaked?

Sorry for the confusion. It was one cup of dried peas that I then soaked (I will change the wording). And for me it was about a tablespoon and a half. Itll depend on the size of them though.

@@matthewsguyanesecooking4601 Is there anyway that some of the sugar in the recipe could be replaced with some cinnamon and it would still taste good. Its just to reduce the sugar content. Like instead of adding 3 cups of sugar to the inside stuff you could add 2 cups and some cinnamon.

When I purchase this from the store, the filling is much darker...do they use kidney beans or use browning to colour the black eye?

You can use some browning or you can put the sugar in the butter to caramalize first

because its a bean paste cake, i knew it had asian origins. when you said its tradition to eat on new years, i dont believe its indian tradition since black eye is in every bakery along with pintart and cheese rolls. if its a tradition for some, it stems from chinese tradition of eatting moon cakes on new years which have a variety of bean paste fillings.

I have never heard of people adding food coloring to the filling. Usually burnt sugar or casareep are sometimes added.

Chinese cake pastry is not the regular pastry dough. This is moon cake. In the sixties and early seventies the Chinese cakes sold in the Chinese bakery shores were several layers of tissue thin and colour pastry.

The bakeries add the yellow food coloring to the egg wash when they baste them. I didn't add yellow coloring in mine.
