Ingredients and Measurements:
For the dough: • Tennis Rolls || Guyane...
For the coconut filling:
5 cups freshly grated coconut
2 tsp. freshly grated nutmeg (1 tsp. pre-ground nutmeg)- or to taste!
2 tsp. ginger powder- or to taste!
2 tsp. mixed essence
1 1/4 cups sugar- or to taste!
1.5 tsp. red food coloring (use more or less depending on preference)

Mathew your such a great chef ...I tried this exact receipe and mine is as lovely as yours are looking there .. it's so juicy and delicious and the bread part is so soft and perfect !!!!! Thank you....I've even tried the brown sugar stee the other day and it was perfect!!!! Everyone loves it

Thank you! Nooe you dont need to allow it to rise a second time after filling. You can if you want though. The bread is so thin anyways I have never noticed too much of a differenc.e

Hi Matthew nice video did you extract the milk from the coconut after you grated it ? How did you prevent it from getting liquidy ?

I did not extract the milk. If you do, then the filling will be too dry and then it won't be juicy on the inside. To make sure it doesn't get too liquidy, you don't overfill the salara.

Looked delicious.. I have a question after you put the filling on the dough.. do you allow the dough to rise for 30 mins or you just put it in the oven to bake..

Great recipe! Question though. I made the tennis roll dough and the coconut with frozen coconut. Was that dough supposed to make two logs or one? I made one...rolled it out to maybe 16"x10"... And it's huge...like really fat

You can make a huge one or two small ones. Depends on preference

Hi Matthew, my salara become hard. I didn’t used shortening because in Holland we don’t have that. What can I use to make it soft?

You probably have to make the dough softer, don't make it too much (because that dries it out) and also you need to wrap it up once it cools or else it can also dry out. You do not need the shortening.

When you punch down the dough do you need to cover it and wait again for 45 minutes? Or one time is enough?

If you have the time you can let it sit for like 30 ish minutes. But you don't have to

Nice! Wonder what would the instructions be to make them into individual rolls in terms of amount of dough for each roll, how much tablespoons of filling per roll and baking temperature and time?

About 2 cups filling per roll. Bake 15-20 min at 350 degrees.

@@DC-vw7yf Oh ok. If you want to do individual tennis rolls then you can do the 2 tbsp. Sorry I thought you meant for each log. I actually have a recipe where I've done that before with the coconut mixture and made individual salara rolls. I'll share it very soon.

Hey I tried this recipes and theres a problem I'm not sure but I find that when I'm stiring the sugar in the coconut ita not melting and getting moist like yours. Its getting dry instead. Why is that?

I think you have your stove too high so it dries the coconut too fast. Slowly toast and the juices will flow.

Does anyone know where I can get authentic Red Bread in New York? I hate when these Guyanese bakeries use the coconut flakes instead of the grated coconut. It really makes a difference!

You can, but it will not be the same texture on the inside and you will have to adjust the sugar (being that the coconut flakes are usually sweetened). I recommend putting the coconut flakes in the food processor to make the pieces a bit smaller to get the texture similar to that of the freshly grated coconut.

You overcooked the coconut mixture. Once you add the sugar, remove it from the heat.
