Guyanese Vegetarian special is paratha roti and dhal accompanied by fry ochro, pumpkin or spinach.
Paratha or oil roti:
Ingredients:
4 cups all-purpose flour plus 1/2 cup for dusting
1 tsp baking powder.
4 tbsp oil, ghee,
1 tbsp butter or margarine room temperature
1/4 cup oil for cooking/basting
room temperature water to mix.
Dhal (Split peas)
2 cup dhal (split peas)
10 -15 clove garlic.
1 medium onion
1 wiri wiri pepper
½ tsp turmeric
½ tsp Garam masala
Salt to taste
Fry Ochro
1 lbs ochro (Bendi)
1 Medium onion
4 Clove garlic
¼ cup oil
1 wiri wiri pepper
Salt to taste.

Bhougie, your dal is really looking good. I love the color. I like ochro as well. I like vegetables too. I am surprised that you have only put one pepper into the dal. Gosh, just watched this, was so nice! reminds me so much of my mom's. Been looking at you guys for a while now and this meal made my 'lele -ran' lol. Your show nice and fun, luv your tease and laughter, nice, great couple. Any tip on why my dhal 'froths up" in my pressure? i did it both ways, soaking and straight into pressure, but same effect, scares me in the kitchen, lol. baghie was nice touch, never thought of that. Now i want to try rotis, u made it look so simple. Still not sure how u kept the ochro from getting slimy! i have to wash before cutting up, drying off with paper towel OR dish cloth, then cut up, just before adding to pan, to prevent the slime, hate the slime, I think your hubby didn't mind slime? but i prefer it crisp which is why cut up, only before adding to pan. great job, luvin your show lots. I'm in niagara falls, but my sis and bro too are in brampton! tc

@Grenville-f3v Hi thank you very much for your kind words. Fill your pressure pot only a little above half or half, don't add too much turmeric. When your pot is pressurized, turn heat down just to maintain pressure for 12 minutes. Then remove pot and let it de-pressurized on it's own.If it's too thick, just add boiling water to make the dhall how u like.
