ઠંડી કે વરસાદનું વાતાવરણ હોય તો ખીરું પલાળતી વખતે દહીં કે છાશ ની સાથે જરૂર પ્રમાણે ગરમ પાણી ઉમેરવાથી ખીરુંમાં આથો ઓછા સમયમાં આવી જાય છે, ઉનાળામાં બનાવો તો નોર્મલ પાણી ઉમેરવું. હાંડવો નું ખીરું ઘટ્ટ રાખવું જો ઢોકળા કરો અને આજ ખીરુંમાંથી ઢોકળા કરો તો પ્રમાણમાં પાતળું રાખવું.

This Handvo I made from Handva flour but if you want to make from rice and dal then take 3 Cup Rice, 1 Cup Toor Dal, 1 Cup Chana Dal and 1 Cup Urad Dal, Mix all of them and wash it three times and soak it in water for 4 hours, you can Add 1 tsp Methi Dana so it would give good fermentation. After 4 hours drain out the water from rice and dal and wash it again then take it in mixture jar, add curd and grind it, Make the batter, Ferment the batter for 3 to 5 hours. Depend on your weather. Then do the further process.
