Hope u washed ur hands really well after tossing the peppers in the oil barehanded. I’ve stupidly touched my face RIGHT after handling milder jalapeños and it felt like someone took an extremely hot clothing iron and pressed it on my face. It was that bad. Thankfully I’ve learned my lesson

@outdoorindoortexan
@outdoorindoortexan 4 жыл бұрын
Done. Thanks for mentioning this as I’ve been planning on making another hot sauce video, and this go around will show the seasoning process. In the meantime, you essentially take the mash paste and smear it onto wax paper and then put the paper in a dehydrator. Run it for 12 hours or so on a lower setting until it is brittle and, well...dry. Then pulverize with a mortar and pestle or food processor and add a dash of salt to taste. Done and done.

I'm curious - why would leaving those two things out increase shelf life? Also, what kind of shelf life can one expect? I'm the only in my family that likes things this hot so it'll take me some time to work through a batch. :)
@outdoorindoortexan
@outdoorindoortexan 4 жыл бұрын
@@wjcallihan typical shelf life (in fridge) would be 2-3 months if not longer using the recipe in video. BUT that’s more of a rule of thumb as I’ve had bottles taste and be fine well after that. It’s really a matter of ph level, how much vinegar is added. Sub ph of 3.5 or so would be a fairly steady bottle.

A little side note here folks, never ever handle or process hot peppers bare handed! My wife unknowingly discovered this fact after processing a large batch of really hot habanero peppers barehanded.The oil of the peppers soaks into the skin of your hands and burns like you put them in a fire. And even worse is the cure, as the doctor told her to run hot water as hot as she could stand it over her bare hands to dilute and wash out the pepper oil. She was crying before this terrible episode was over. And absolutely never scratch or put your finger in your eye!!

I keep coming back to read the other comments🤣. Thanks for the terrific starting point. Great sauce! Also to give a little back as payment for the inspiration... I found that an air fryer at 400 for 10 minutes does a KILLER job of roasting habaneros, ghosts, and fruit without heating up the entire kitchen or gassing out the family. I subbed roasted mango and pear for sugar. Mostly lime juice to replace the vinegar, splash of apple cider vinegar, Tamari and fish sauce (tiny amounts!) to cut down the sweet. The lime base makes my hybrid version crazy good on everything it touches. I made only a small trial batch, or this would have been in my pickled duck eggs. Still waiting on those to age so I can sample.
