A common reversal I run into is when I begin to tripod like @7:10 and they take their arm on the underhook side and clamp down (overhook), use the arm on the crossface side to post on the hip and bridge you over to their top side or top n/s. Any tips on what I might be doing wrong?

Snapdown Brah that can definitely be a problem. It sounds like you may not be distributing your weight properly. Try using your forehead for base along with making sure you are driving yourself forward to smother your opponent with pressure. It should be so much pressure they can’t bridge out of potential injury on their neck. Does that make sense? Also walk your underhook arm up more to nullify the overhook.
