I tried your recipe with mascarpone in the cream and it whipped beautifully! It's the first time I was able to make a cake that looks almost as good as store-brought ones :D

Many years ago (in the 1970's) we would go to Chinatown in Los Angeles and buy a similar cake. It was so delicious. It had sliced almonds on it as well. It was the most delicious cake I'd ever tasted. I think with some practice I can do this! Thank your vey much for sharing your techniques Hanbit Cho. 🙏

The genois base for us Americans: Eggs 148g - 1.7oz (about1 small egg) Sugar 74g - 2.61 oz Cake flour 74g - 2.61 oz Butter 21g - 0.75 oz (1-1/2 Tbsp) 40C bath temp = 104F Milk/Butter 55-60C = 131-140F Bake at 160-165C = 320-329F ( go with 325F) for 30 min
