Soaking in a little cold salt water, drain then dry, will help or if you must lemon juice of vinegar. Honestly the fresher they are the less issues you will have. For sure the smooth, greener ones are best, with the snap. It can only go wrong is you mess around, just cut and cook without over working them. If you are adding liquid like tomato, make sure it is cooked dry before adding you can cook these separately. This will avoid the stewed effect. Form my understanding Louisiana style "gumbo" they embrace the slime and and make it work, they even substitute with other slime producing veg.

Hi m Dolly I cook my vandika that's in Tamil. wash .wipe cut rounds n fry in pan. To take out stickiness out .no oil .the u add little oil in another pot .add onions 1 .n red masala n turmeric. n little fine salt .no lid fry on medium heat until its done .eat with roti n rice. I also wash wipe n cut into rounds .n dry in the sun on a tray with a net covering. or keep on the table n next day when it's dry cook .same as above. Very easy n tasty.❤

I've always had trouble cooking okra properly. So for years I just avoided getting okra from the produce section, to just gettng frozen okra. I had a bad experience cooking a pot full of okra only for it to come out very slimy which ruin the rest of the dish. Thank you for showing me a better way to cook this vegetable. 😃

Your wooden cutting board needs to be without design or a pattern so that when you wash it , it has to be well dried so black mould does not grow on it. It is better to use a plastic cutting board. Wooden boards should not be kept in the cupboard and should be plain without design to dry properly after washing it. Pls take rings off when cooking so easy to wash hands. Lovely recipe and explanation is very thorough.

First time watching your show 09/22/2024 Yes, I did try frozen okra a few times and it does cook nicely. However, I won’t ever buy it again due to dishonest marketing. They add the none eatable okra in some of the packages and you know that’s not eatable at all!! I was so hurt many times that I had to throw it all away!!

Those cut heads i dry them and grind to a powder and use the powder for cooking. I believe in nothing goes to waste.

I have ate fried with oil and flour sometimes I.put cornmeal on my fried okra. I love it. Now my sweet Mom is in Heaven .Mom has boiled okra and it is slimy when you eat it. Slime in okra can be neutralized by adding soya sauce. After you add the okra 500gms add 1.5 table spoons of soy stir and np more slime. Please try and let me know your results.

Hi Shrikant i love okra grew up eating them in our pinakbet recipe but it is made with fish sauce bagoong in my country so i dont make it for my family here in toronto...i just cut off the top and steam them and dip on lemon fish sauce ..i am happy they get slimy in my mouth and i love them anyway slime doesnt bother me ...one time i went to organic store and saw a green packaging of okra that was made like tempura ( a good idea but i avoid fried food) thanks

In Greece we eat a lot of okra. There is no need to cut them up, just trim the heads into a little cone shape. This takes some time. Even better is to buy frozen ones. They are already trimmed and are excellent. No need to fry them. Put them in a pan and sprinkle them generously with vinegar. Wait about half an hour. Now add your onions, spices, tomatoes, oil and whatever you like. Cover the pan and cook. There will be no slime. We especially like the very small ones.

I love okra but I add pole to pole sliced onions only after the slime is gone. Slice in some ripe chunks of tomatoes and a few spoons of Samber powder to finish of he dish … Hevenly 😋😋
