OMG You showed us celiacs how to crack the code without having to combine 16 flours and a prayer to get bread that is bendy and chewy--(so chewy)! I was doing my happy dance in the kitchen. I added some salt to the water and it was PERFECT. Off to Asian market to buy 1 dollar a bag rice flour--lots of rice flour!

Rice bhakari is one of our staple foods. Rice dough is extremely hard to work with, unlike wheat. Very few people can make a decent bhakari. If you fail, keep trying. Easier to make rice (in all its hundreds of varieties).

@@Spicydoc1It was so strange growing up in the US eating anything and everything, then suddenly needing to cut out wheat and all artificial ingredients (and I went vegan on top of that, except for raw honey) and basically losing 95+% of my options. But a lot of GF food has been growing in popularity here and every store has *something* (even if it has eggs and/or dairy which I can't eat). I've gone from feeling like an outcast to being the secretly competent underdog after years of getting good at cooking (not to mention saving lots of money and developing a universally helpful skill). And I couldn't have done it without such helpful resources like this video.

The simplest gluten free recipe! My kids just had these today for their meal. I ran out of gluten free all purpose flour. Glad I found your recipe. I couldn't decide if I could use brown or white rice flour so I used half a cup of each (and a pinch of salt). But I guess it would work with a cup of either of both. It was really sticky even if I sprinkled flour so after some attempts, I just rolled the dough between 2 parchment papers that have been lightly brushed with olive oil and came out great. Thanks for this recipe!😊

@@BrandiWL hi! No, sweet rice flour is another kind of rice flour which, I believe, is also sometimes called glutinous rice flour (it is stickier, i think) but it might work as well😊

I tried this rice flatbread recipe and made the steamed dumpling recipe with it and they didn't come out good. Perhaps I didn't dry my rice out good enough. It's a long slow process.

Making flat breads of anykind is considered to be the jewel in the crown in Indian home cooking. In my opinion , It is the ultimate test of patience and manifestation when it comes to cooking. This recipe is not easy but after a few tries you will appreciate what you have learnt. All the best 🙂

Could I transfer the dough after it is cooked to a stand mixer? I have RA and the thought of hand kneading makes me want to cry. Also, could one store the dough after it comes together for future use?

One important variable I forgot to consider was that the first 2 times I made my own rice flour with basmati rice, but the commercial grind rice flour may have been a different rice. Dough that is too wet is very sticky, so I may need more flour in any case. Thank you for your presentation, which I am grateful to watch again.

I made it with the commercial grind rice flour and it was a mess. I gave up the texture is very different from what I see in the video with what I am making. I dump it in the garbage. Such a waste. Maybe I need to use the same rice flour they are using.

Can you cook or dab it in butter? My daughter has MAST and is allergic to olive oil. It looks to me while it is less authentic using butter, it should work.

"Namaste Organic Gluten Free Perfect Flour Blend" from Costco is made from brown rice, sorghum, tapioca and arrowroot powder. This was the only rice flour I had in my pantry so I tried this recipe 2X. It didn't work and became a sticky mess like glue. I think it's very important to use a 100% ultra-fine white rice flour for this recipe which in my area is impossible to acquire from a local store. I'll have to purchase it online because I'm determined to make these beautiful flat breads. I'm very much looking forward to trying this recipe again!!!😊

I have never tried with brown rice flour. If you are going to try it then make sure the flour is really fine.

It takes an attempt or two to understand the dough, so I would recommend that you try making a smaller batch first, with one cup of rice flour. It is not as strechy and glutenous like wheat flour so it needs to be rolled with gentle hands. But the effort is worth it and with practice you will be rolling them out like a pro :)

Hello @HappyBellyfish. I did tried the recipe last night. The dough was not formed like in the video. So, I ended up adding more flour to shape a dough. I think it may be related to the brand of a flour. So next time I'll use less water. Working with gluten free flours it is like a science. Thanks.

I made them twice successfully. I made them 2 more times and the dough sticks to everything it touches. I used water, rice flour and oil to keep it from sticking. I want to try again. I’ll keep going over the video .

Thanks so much for the recipe and fantastic tutorial! Do you have any tips on how to make it thin without breaking? The ones I made were quite thick so they don't fold nicely and they have too much bite. Also has anybody tried flavouring them because the taste isn't that good?

It will take some practice and patience , but here are some of the tips I got from my mom when I had the same trouble. 1.The flour has to be very fine. 2. he dough has to be firm and not sticky , this way you will be able to roll it with more confidence. 3. When you are rolling use the dry flour judiciously. Too much and it will dry the dough and too little it will stick. Rolling surface must be thin. 4. The rice flour is already cooked, in water , so do not cook it for too long on the pan. The cooking on the pan makes the surface firm but just enough so that it can hold its shape. I hope it helps. Rolling rice flour dough is done with light hands and gentle pressure and if you make it two to three more times , your patience will pay off.

I love this recipe and I would love to make it work. But everytime I make it, the bread turns out very stiff. Any tips?

try kneading it with a little more water. You can also check if the rice flour is fine enough. After you have kneded the dough, dab a few drops of Ghee or oil and on the dough's surface. Keep it covered . During cooking, try to cook on medium heat and try to cook it for about half the time. Quite often we think the roti is undercooked and we end up cooking it too much. Try again, you will get better with practice :)

You can... but the method of flattening the dough into shape will be different. You will have to pat the dough with your fingers to flatten it, on the pan which is on low heat. Try making smaller rotis first. Brush the roti with ghee or any oil while it is still cooking on the pan. This Roti will not fluff or balloon. Or.....(wait for it ....) prepare a garnish with butter, garlic and coriander, salt, and brush generously on top of the simple rice roti :). Let us know how what worked and what didn't.

we haven't tried, as the classic recipe is made with white rice flour. It might work though, but you'll need ot experiment with proportions.

Two cups of boiling water , 1 cup of rice flour that is the standard measurement. But in my experience, I remove about half a cup of boiling water before adding the rice flour. I then make the dough as you will see in the video. And as I knead, I add extra boiling water if needed.Another tip : Have extra flour and boiling water , just in case :) . Another viewer had commented long ago that one must not use glutenous rice flour, so watch out for that :)

I have not tried it myself but, I am sure it will work. It might have a bit more fibre, so you might have to grind it really fine and keep the flat bread small.

Hi Pam, Thank you so much for your kind words. As a family we are trying our best to help people around the world to eat better and healthier. Words of encouragement is what keeps us going. This is a great recipe for you but it will take an attempt or two to master. So please don't give up. The rice flour is important here , non glutenous and white. When the flour is white the bread will not crack when you are rolling it flat.It must also be as fine as possible. This flour is used extensively in Indian cooking and any Indian brand or store will have it in abundance. The amount of water is 1.5 cups for 1 cup of flour. This is a safe measurement . Keep additional hot water and rice flour handy , just incase you may need them :) . Happy cooking and I hope you enjoy it 🙂

I have never tried making it with brown rice flour , but I assume that it is a much coarser flour compared to white rice flour. And due to that it may not bind well together or it may be difficult to roll it thinner. Probably , you could grind it n a blender , use a sieve to fiter out coraser bran and also add about 2 Tablespoon of ground flaxseeds for one cup of flour. I have not tried it but I think this may work 😁. After all, Kitchen is about experimenting.

it's just rice flour but you can experiment with flours that can act like binders. This video was made several years ago , and the brand that was used was TRS rice flour that was commonly available in Germany.
