I made this tonight and was excellent. Didn’t have the Asian wine so I used white wine. White pepper kind of expensive, but got some. This is a very tasty recipe.

This looks soooo good! Heck I would even cook the scallops in a garlic butter/oil mix and smoke the asparagus to toss with a soy sauce, butter, and rice vinegar sauce.

Hey my friend. Glad you tried the dish I suggested which I made about a month or so ago. I noticed you cooked the scallops in a frying pan that resulted in no water build up. I did everything in the wok and got water build up. The birthday dinner was a success. Chicken fried rice, sweet and sour shrimp with broccoli and pork colored peppers in hoisin sauce. We'll be enjoying leftovers for the next few days.

There are different types of scallops which will hold more water than others. I saw this on Good Eats when he talked about certain scallops for sale in the supermarket and what to look for.

I got caught out too with the wet packed scallops last time I bought some :-( make sure you get the dry packed scallops so much better :-) "When shopping for sea or bay scallops to use for recipes, look for “dry-packed” scallops. These have been shucked and shipped packed on ice, with no chemical additives. They tend to have a slightly pink or off-white hue and a pleasant sea smell. Avoid the very white “wet-packed” scallops that are sold in many supermarkets. These have been soaked in a solution containing phosphate, a whitening agent that keeps them fresh longer but also allows them to soak up more water, increasing their weight by almost 30 percent. They tend to release a lot of liquid when they’re cooked, causing them to steam rather than sear to a nice caramelized crust. Phosphate also gives the scallops a slightly soapy flavor."

The following is just my opinion... 1) The scallops, star of the dish, are over-seared; 2) The asparagus and carrots could have been sliced into smaller pieces, at a bias, so as to complement rather than to compete with the scallops (better mouth feel with all the ingredients together); 3) For scallops, I would use a much lighter sauce than the dark brown one shown, perhaps a seasoned crab meat sauce thickened with a corn starch slurry.
