She also played McLovin's mom in Kick Ass 1 and 2 where she gets fried in the tanning booth at the beginning of 2. It's looks to me you guys were watching the uncut international version, the movie was severely cut down by the MPAA when it was first released with an R. We didn't get this uncut version until the US blu ray was released and a lot of the violence you saw was not in the R rated cut that appeared in US theaters, cable, VHS, and DVD. The workprints are the most complete and uncut versions to own but you can only attain those through bootlegs right at the moment but this version is pretty damn close to the workprint version and how John Woo envisioned it.

Sorry for late comment, just found this channel: amazing! Manly Movie Mondays is such a great idea. Some of John Woo's Hong Kong action flicks are a must. Have you guys seen "Jean Claude Van Johnson"? It's a mini-series on Amazon Prime starring JCVD, playing himself, in a comedy send-up of himself and all his best movies. You have to see it! The premise of the series is that JCVD really can do all the stuff he does in the movies, and his job as an action star was always just a front for his real job as a secret agent doing missions around the world. Now he's retired, and you can guess what happens next...
