This street food is also fast food, it's fried bananas using some unknown oil. The non fast food version would be baked banana slices or fried in olive oil.

You haven't seen the real thing yet. To start with This is not the banana used for making chips. That's a different variety. This doesn't come anywhere near the chips made in Kerala with those bananas and also the process is little different.

For all those complaining about hygiene, the banana chips are not touched after they are deep-fried in boiling oil, so I assume that the temperature of the oil would sterilise the chips and it will be safe to eat as long as you eat them right after they come out of the wok.
