Now I am using a 5 inch tube and it is very easy. Good luck, when you debone 3-4 chickens or turkeys it will be a game not work.

We finally cooked it in another house on Christmas day, so it was not possible to take a third video, but you have seen the difficult parts. Cooking was really simple, and the result very nice. I made a separate rice stuffing using 25% of the liquid from my gravy, diced chicken and turkey livers, raisins, glazed chestnuts with sweet wine, and on top roasted pinenuts and almonds. Gravy on top.

Place the rolled turkey in a baking dish add 1-2 onions roghly cut, carrots, celery stalks and cook as all roasts. season as you wish, and add your own herbs bay leaf etc. Keep the roll covered ALL the time, and after roasting do a gravy from the juices and the veggies. Slice the roll when it is rather cool. It will be hot when you add the hot gravy.
