Recipe:
Ingredients:
• 2 white potatoes (grated)
• 200g streaky bacon
• Handful of rocket
• 100g cherry tomatoes sliced
• Half an onion (diced)
• Handful of cheese (light/medium flavour, whatever you have)
• Salt & pepper
• 2 eggs
• 2 wraps (use GF wraps if you want a gluten free breakfast)
Directions:
• Dice the bacon and put it on a medium/high heat to start to render the fat.
• Grate your potatoes coarsely and squeeze as hard as you can to get the moisture out of them (wring in a tea towel for best results).
• Once there is a layer of bacon fat on the pan, add your potatoes and pepper, then let sit until the bottom starts to brown (3-4 min)
• Add half a diced onion and stir the bacon and potato together, let sit for another 5 min to brown.
• Once everything is browned, bunch the mixture up to one side of the pan andadd cheese and cherry tomatoes. Let sit on the heat for 2 min to start the cheese melting.
• Make 2 shallow wells in the mixture and crack an egg in each one .
• Once the eggs are warmed but still very runny, spoon out the mixture in to the middle of two wraps, add rocket.
• Fold the wraps over and place back in the pan, fold side down until browned (2-3 min), then remove and enjoy!
