Used to work at a 5 Guys. Fries are cooked in Peanut Oil for about 2 and a half minutes, pull them put to cool a little, then cook them again for another 2ish minutes. They're done when floating and Golden. The seasoning in the vid is the Cajun seasoning, or you can just use salt. If you cut your own potatoes, make sure to rinse the Starch out of them.

Actually, I don't know if this is different between locations, but I work at a five guys too, and we just use the in store McCormick Cajun seasoning. Specifically want potatoes from above the 42nd parallel for a denser potato. Cut and clean them thoroughly to get as much starch out as you can, precook them in peanut oil at 345°F for 2.5-3 minutes or until they are dull, limp, and the inside can be gently mushed around without breaking the skin. Let them rest for about 3 minutes then cook them a second time. Salt generously, then season if you want them Cajun. That's the whole trick to five guys fries. I'm spacing on the kind of potato, but I believe the president is correct.

Former five guys employee here. Make sure you rinse the fries after cutting them until no starch remains. Pre fry them until they are soft without the skin breaking, let sit for 15-20 minutes then fry again until crispy. That's all they do.

Can confirm all these instructions. I've prepped literally tons of five guys fries. The soak process to remove the starch is intense. I think it was three or four long soaks before they were ready to be stored. They sit in water for hours. It's easy to replicate, but most businesses don't want the fuss when they can get frozen fries coated in sugar that fry up nicer for less work.

Not a 5 guys employee but a chef at one point . We used to soak the fries in a bucket and all the starch went to the bottom of the bucket take orders of fries out when you need them and drop them in the basket and perfect fries

I had family in Wildwood, NJ, and some of them worked on the boardwalk on various food stands. Real boardwalk fries are made with peanut oil. The peanut oil not only gives them their lightly brown color but also gives them their unique flavor and crispiness.

@MsHojat Plus that shit is well made. I've never had a bad or mid meal at 5Gs. I've had bad meals from plenty of other fast food joints or restaurants that are cheaper or the same price. Paying extra to know you'll always walk away happy is worth it. It's kind of the point of fine dining and paying $400 for a meal for two.

Yeah, it's way to expensive for "fast food" (compared to others in the UK atleast), but it's entirely reasonable for "sit-down" food, and it's portion size and quality puts it on part with "restaurants" rather than fast food. All that said, I still only go when I'm buying on company dime... because almost no takeout food can't be recreated as well or better for less in a function home kitchen.

As a former five guys cook the secret is to soak the fries for a few then fry them for like 5 minutes take them out let them dry off for like 30 mins then fry them again until they float GOLDEN BROWN of course and apply the seasoning to your liking

I worked at a Five Guys for almost two years. Almost any Cajun seasoning mixture will work to make them taste the same. But the washing of the potatoes is what makes them less starchy and changes the flavor to more of a mild potato flavor. We let them agitate in a special oscillating vegetable washer for no more than 5 minutes. Then we wash all the excess foam that happens in the process off of them before letting them sit in an ice cold water bath for a minimum of 15 minutes. After removing from the water, do not pat them dry, allow them to drip off any excess water for a couple of minutes and then we do a double fry method. In a 375°F (about 170°C) let them cook for 2 1/2 minutes. Bring them to the surface and allow them to cool completely. You want them to be dull in appearance and to smush slightly, but not breaking the skin. Go in for another road of cooking in the same temp for the same time. If using an actual deep fryer, shake off excess oil, at least 20 shakes. Lastly, dump onto whatever dish you're serving on and immediately season with salt and cajun. You're welcome. They could've afforded to pay us better with the amount that they charge for the food. As a manager, I didn't even make $15.

If you guys don't wanna make spice, they use the Mccormick Bayou Cajun Seasoning at the restaurant. Edit: You apparently gotta get the "gourmet" version. Standard ain't the same thing. Edit #2: Tried his recipe with from-scratch fries and it's pretty damn accurate.

I use to work there they use Idaho or Washington potatoes and after cutting the potatoes they put it in cold water an let the water run on them until the water is clear and no more dirt an they have a pre cook sit and cook Process.

This is specifically for the cajun seasiong you can ask for, not the regular fries since they just add salt to those. You can just buy McCormicks cajun seasoing, its what they use if you dont want to make you own seasoning. The secret is washing off all the starch after you cut them and have them be submerged for an hour or more before double frying them in penut oil. The first fry is 2-2.5 minutes at 345°F let them rest 3 minutes then fry them again for another 2-2.5 minutes. If you feel like the fries you get at your local five guys are still soggy you can ask them to make them crispy, which means they'll fry them longer the second time. Its a protocol they have. Then just dump them out onto a napkin instead of keeping it in the bag before you eat. At my store we would use idaho potatoes.

As someone who used to work at a5 guys, the real secret is in the prep, the fries are cut each morning fresh and rinsed multiple times until the water runs clear to remove as much starch as possible, and then the fries are double fried. you fry them for 3 and a half minutes and then let them rest, they are then dropped back into the oil for another 3 minutes before serving.

Maybe but truth is, most of us don't go to these fast food places because we don't know how to make it. Most do cus it's already made, easy and convenient. Fast and easy is king What am I supposed to go looking for specific potatoes at multiple stores to find them, cut and wash, blanch then cook them again, gather all the ingredients for the seasoning, mix and pour over some fries that are gonna only be good for the next 30 minutes?

What matters is how you make them, they arent single fried, they are fried twice, the first fry softens them up initially, you get a light yellow color, then second fry is golden brown. Thats the key to em. ( i would get 100% on secret shoppers anytime i was on fries)

Use a spice grinder (or equivalent) to make the spice blend a nice even, powdery consistency, that way the fries will get coated better. Edit: also you can roast the spice blend in an oven on low for a short amount of time for a little bit of a smoky flavour

They are hands down THE place to go if you need your food to be separate due to allergies (aside from peanut), though. They were my saving grace when my food sensitivities turned up to 11 on like half the produce aisle like 7 years back.

Patented recipes are only meant to prevent the commercial use of a recipe. It would be illegal if he tried to make money out of it or if he specifically gave the recipe to Five Guys rivals. However, if you find a patented recipe through legal means, nothing prevents you from spreading it to friends and family. And a KZbin community doesn't count as financial rivals for Five Guys.

They can’t sue him for talking about it because he isn’t actually selling the recipe nor the product and he isn’t profiting off of the actual food or recipe. We need to stop giving these corporations so much power and stop fearing them because they are taking over and running the world. Information is free and you can’t sue for free information. Companies need to stop acting like they have something to hide because they aren’t that special and if they were to keep all this power they then became a monopoly because they think they have something proprietary. The only thing Jordan would be profiting off of is his video which is an original piece of his own art. Just because the art points to the treasure doesn’t mean that the artist is giving away treasure. Jordan is safe because he hasn’t acted on anything and if their information has leaked out to him then that Is their fault anyways. Besides are they gonna keep the recipe from their employees too? Perhaps they should be arrested for knowing the recipe too. They are the real thieves anyways.

I used to work there, and they cut the potatoes fresh, then they run them through a rinse for about a half hour. Then they pre cook them in peanut oil, let them rest for a while, and do a final cook on them also in peanut oil. You're welcome

Vid summary: Five Guys uses "boardwalk style" fries, which I gather is a specific style done by cooking them so they're firm on the outside but soft inside. They do this by frying at around 375 degrees for around a minute, letting them cool for 10-15 minutes, then frying again also at 375 for 4-5 minutes. If you don't want to bother doing this yourself, just get frozen fries; they usually do it for you beforehand. Their Cajun seasoning is made with: 1/2 tbsp sugar, 1 tsp smoked paprika, 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, 1/2 tsp red pepper flakes, 1/4 tsp black pepper, 1/4 tsp ground thyme

I used to work for 5 guys. A tip I learned is do not get salted Cajun fries because the Cajun seasoning already has plenty of salt in it so adding salt just makes it way to salty. Trust me you will be just fine without adding the salt.

Cajun fries are good and yes you can make the seasons easy. I used to work for them, now I make the fries myself at home and what I helped my kids appreciate the taste of fries with or without the seasonings. They prefer my fries over take out!
