This is very similar to how my father in law made his. He also used a cheap red wine for the marinade especially if he was making alot. He was from the big island (born in Honokaa, lived in Ohio after serving in army). Best cook I ever knew..

Hi and thank you for the great question! We like to leave it raw and chop it super fine like a julienne cut cabbage. It adds a nice little crunch! If you can't find good fresh cabbage or it doesn't appeal to you then you can do a simple sautee!

Thanks, I love Ohana and Ono, their teriyaki is more syrupy and not so soy sauce tasting. That's how I would describe it, but I can't seem to replicate it.

Hi! Thanks for your comment! We haven't had either of those in such a long time but if you are looking for more of a syrupy texture then 2 possible approaches come to mind. 1, you can try using a higher ratio of your slurry which is just equal parts cornstarch and water mixed together, add that to your sauce and bring to a boil while whisking. It would thicken right up. 2, would be to use more brown sugar which can sweeten it quite a bit then reduce your sauce until it gets to the consistency you are looking for. Hope that helps and the next time we're craving some Hawaiian food we will try to get Ono or Ohana to see if we think there are other ways to replicate it for you. Let us know how things go!

How do you get your slices so thin? I used skirt steak and it was too thick 😔

Hi Cleveland! That's a great question - it's more related to your knife than it is the cut of the meat (though that does play a bit of a part too). To get thin and even slices, you're going to need a really sharp knife and make sure you're cutting against the grain. Not everyone can get a super fancy knife, but you can make sure to maintain and sharpen your knife (we made a video about sharpening: kzbin.info/www/bejne/gHTPXpmvf9ukfcU) before you do any cutting that needs that precision. You could if that's your preference but it's not necessary. We find that pineapple can become overpowering, but definitely use it if it's your jam!
