I have been using the same optical to 5.1 device for the last 3 years without any issue. Only downside is that turns on to 2ch by default and you need to change to 5.1 by pressing the button on the device every time. I also tired the same HDMI to 5.1 device 2 years ago and it did just stopped working after 2 months.
