Poolish bro. I started making pizza at home after moving from Staten Island to New Jersey and not having any good pizza near me. I never used biga yet k think next week I will try it but I’ve been using a poolish lately and wow. That method is superior to all the pizza I’ve had except my favorite pizza places that serve authentic margarita pies neopolitan style. This preferment is the way.
