I love the idea of the infused liquor. The idea to use the feeding sac of a creature that has taken time to painstakingly collect grain and grass and other edible plant parts in this remote tundra -- that makes sense and is brilliant, I think :) I imagine though, that if you dumped the raw parts into the liquor is missing a step. To properly take advantage of this, he should have toasted or roasted this sacs, and their precious contents, before infusing it into the liquor. A little roasting of any protein, seed, plant matter, drying it out -- this would likely have done wonders, I'm guessing!

How can 'experimental cooks' be so unfamiliar with poultry innards? In a chicken, the 'feeding bag' would be called the crop. It just holds gathered, but unprocessed seeds/grains/leaves

There is a certain irony to this … situation. Scandinavian wealth (which Scandinavians don’t care to ever make note of in public) funds a restaurant in a region, so remote, that only wealth makes possible. They bring their friends (presumably of similar wealth) to enjoy the experiment of the monied class. Nothing wrong with it in the least, but it is interesting … as they go back to their electrical cars and social justice causes.
