Recipe:
Tools: food processor, bowl, spatula, cookie sheet, muffin liners or molds, cooking spray
Preheat oven to 350
Ingredients:
2 cups of large flake rolled oats
1 1/2 cups of apple sauce ( sweetened, unsweetened or you can make your own.
2-3 teaspoons of cinnamon
1/2 teaspoon of salt
1/2 cup of nuts of your choice (optional)
Nuts and cranberries for the top or any other kind of garnish (optional)
Directions:
In a food processor blend 2 cups of oatmeal
Add in cinnamon and salt and blend
Add in 1/2 cup of nuts (optional) and blend
Pour oatmeal mixture into a bowl and add applesauce and stir with spatula until the mixture is wet.
Spray your molds or liners with cooking spray and drop the mixture into each mold or liner and smooth out.
Add garnish like nuts or cranberries to the top.
Bake for 30 minutes on 350
Let cool for 5 minutes then move to a cooling rack
Optional: Melt dark chocolate and drizzle over the top of the muffin and add garnish)
