I made the pancakes, and they taste really good. However, they did stick too much to the parchment paper so in future I would spray a bit of oil on the parchment paper or do the same directly on a casserole pan.

All you really need are actual peanuts that you can add as much or as little as you want.. as far as sweetener/oil. I would definitely add some monk fruit. :)
