Try the yamadillas and they turned out great. Added corn and tomato so I got more veggies in. Love to have something that's crunchy on the outside. Keep up the good work

Gotta loves kids honesty! I get that! Any change is noticeable but, it’s nice if you have a couple folks in the family who are really on board. I have over the years gone from just adding more veggies and beans to doing that plus few totally meat and dairy free meals a week. I have two vegan advocates in my family outside me, which is nice. My husband and I do big healthy salads as the most consistent vegan meals mostly. I really appreciate your cashew based dressing ideas. I can see cashew being a more fridge friendly base. Avocado based dressing I image would just go bad quickly I assume? Thanks for sharing
