Tfs! A few things resonated with me. I am definitely guilty of trying to replace the cauliflower with rice. Thanks for that tip/explanation of why not to do that. Also, the reminder to eat more greens and meal prep the salad/meals mid week. I usually get off track if I don't.

I make 6 salads at a time and put them in plastic ziplock “tubs” and then they’re ready to chop, I always chop for max enjoyment, and add my starch after chopping. Sweet potatoes are a great sweet option for my salad. 😊
