OMG!!!! I baked this cake and served it on 12/28 for my father’s bday. The cake and frosting are absolutely fantabulous. The cake super moist and not super sweet. The frosting very chocolaty but not super sweet. This will be my go to from now on.

@@UnathiArosi-h4i It means that it is not a full cup but only 3/4 of a cup. There are measuring cups that will measure that. Or you can measure 1/2 a cup and then 1/4 of a cup. That will give you 3/4 cup.

I always whipped my butter 1st, then added the sugar, eggs and liquids... then slowly added my shifted powdered ingredients... this is ol' school which makes sure all ingredients are mixed well and eliminates the dry ingredients from throwing powder dust all over... be sure to not over mix... we never bought buttermilk, we just made it from scratch as needed... we also bought our milk right from the dairy down the road straight out of the tank... best milk and thick cream ever! You are very lucky that your body will allow that at your age! I'm 65 too and if I even look at chocolate or even the teaspoon of honey I want in my coffee every day, i gain weight!!! So I'm having to eat very restricted right now but the stuff they cook makes me wanna fall right off my diet! I gotta make this cake though!!!

Two things for ya… 1. To make your own buttermilk (or the equivalent) add 1 teaspoon of lemon juice or apple cider vinegar for every cup of whole milk. Mix it really good and let it sit in the fridge until it begins to curdle. I use this for buttermilk biscuits because I don’t like buttermilk either. It gives it the same flavor without a carton of buttermilk going bad in my fridge. 2. If you don’t like coffee, then you can always add a bit of cayenne pepper. The Aztecs knew long before we did, chili peppers enhance the flavor of chocolate much like coffee does. I always add a sprinkle of cayenne to my chocolate mousse. Does a wonderful job bringing out the chocolate flavor. Thanks for the recipe!

My mother loves buttermilk. She never liked regular milk. My dad would crumble cornbread up and put buttermilk and sugar in a bowl and it all the time. That was his favorite if my mom didn't bake anything sweet...and she cooked everything from scratch. 😊 my dad is no longer with us, but I still have my 94 yr old mother and she's still going strong. ❤ God had really blessed her and us to be fortunate to have her with us. May the Lord keep blessing you charming sweethearts too.

I usually don't come back to review the item I made after watching someone on here but this cake really does deserve to be addressed. I made this cake for my son and I, not realizing how enormous it would be. It was the most amazing cake I have ever made or eaten. It was as wonderful and you imagine the Matilda chocolate cake must have tasted. It took a week but my son and I did manage to finish most of it before I decided the last piece was going to go to compost. Next time I make this, I will cut the recipe in half or freeze two layers and just eat one at a time. So lovely and moist and the frosting melts in your mouth. I think half of the frosting recipe would be enough or 1/3 as it was so much we still have several cups of the frosting in the fridge. Thanks for the wonderful recipe it will be one I hand down to my kids and grandkids if I ever get any. God bless!

My Home Ec teacher (65 years ago) would encourage me to tell you that you are using a “dry” ingredient cup to measure “wet” ingredients and vice versa. Generally, a clear glass cup is used to measure wet. Plastic, aluminum, etc. are used to measure dry (flour, sugar, etc). Think of which is heavier, a pound of feathers or a pound of coal? Of course, they weigh the same, however the volume of feathers will far exceed the volume of coal. Ergo, the volume of 1 cup of flour (8 ounces) may be greater or lesser than 1 cup of liquid (8 ounces) and may cause the issues you experienced like trying to get enough moisture in the icing. Cake looks delish and I agree that coffee in chocolate batter or frosting is Amazing!

I made this cake for my son's birthday who is a HUGE chocolate fan and let me say it was a HUGE hit. I have never tasted such a great chocolate cake before. LOVE the baking strips idea! My grandma & mom would put the cooking racks on top of the cakes when they came out of the oven, flip the cakes onto them so the humps were down on the racks, then as the cakes cooled the hump would go down. After cooking, they would take one of the layers & flip it right side up, put frosting on top then put the 2nd layer on top of the first, hump side down. They then frosted the sides and top filling in gaps with frosting. They made such yummy cakes!

Made this recipe last weekend. It was absolutely the best chocolate cake I have ever made! The liquid batter was a little tricky to deal with, but so worth it. I only had 2 matching cake pans, but I used the leftover batter for cupcakes and gave them to my neighbors. That icing…oh, wow! So delicious. Thank you for sharing.

You're more likely to be struck by lightning (1 in 15,300), be involved in a plane crash (1 in 11 MILLION), or in a car accident (numbers vary greatly but still much bigger chance of that than raw batter).

I swear that this is my cake recipe that I lost at least 35 years ago. When we got our very first computer, we were so proud of our Apple II E and my husband promised that keeping track of my very favorite recipes would be a breeze. I carefully typed them all in. About 3 or 4 years later, something happened when one of the kids was playing. I lost all of my favorite recipes. He had proudly made a great ceremony out of tossing the old handwritten recipes as we had saved them in the computer. We tried every single thing to recover them but alas, they are floating in cyberspace even today. This recipe was handwritten on an ancient piece of paper found in an old tin breadbox handed down to me 57 years ago. The frosting recipe was not included with the original recipe. Thank you. My hubby will be so pleased to have his favorite cake again.

I admit. I can't cook. I've watched videos, read recipes, and tried them for years. Baking is the only thing I can kind of almost do. When I came across the image of that slice of cake, I almost drooled! Then I saw the video. Everything was so organized! I began to watch other videos. Everything was so well explained. I became a fan! I made the chocolate cake and I tell you, everyone was talking. They loved it. Some even made the ride over to get more. I was glad to give it up because the cake is huge. I even bought those Even Bake Cake Strips. They work. You have a fan here, for sure. I'm with you, Tom, I scrape every little bit out of the bowls so I don't waste it; it was good to know someone else does the same thing. I'm from the South, although I live in Texas now, I grew up in Oklahoma and was taught how to cook by a lot of good old Southern women like my mama, grams and great-grams and most of my friends' mamas. My great-grams made the same buttermilk chocolate cake without the espresso but when I make this cake, I think I will also put the espresso in the icing and strong black coffee in the mix. If EVER ther was an argument for buying the larger Kitchen Aid with the 6 quart bowl that sits on the arms...THIS cake is it. Clearly your basic Kitchen Aid with the 4.5 qt bowl is stretched to, and perhaps beyond, its limits. Let me suggest that the couple making these videos invest in one. It will greatly reduce your powder splatter, etc as the bowl is deeper. Thank you for the recipe...can't wait to try it.

With all of that oil, butter, buttermilk and heavy cream such an unhealthy dessert and it doesn’t have to be….so many other options to make this delicious dessert….including using a much better REAL chocolate!!

If I may add, my two cents worth. Canola Oil is actually a very healthy Oil and due to its neutral flavour, it should be the preferred Oil. Having said that. I believe in moderation and this recipe does have a lot of fat in it. That’s probably why it’s so good! We can easily mitigate this by substituting apple sauce for some of the oil. Especially since the Buttermilk will help keep it moist. 3/4 cup of Oil, easily can be substituted to 1/2 cup Oil and 1/3 cup Apple Sauce. However, I would even do 1/4C Oil and 2/3C apple Sauce. Hope this helps keep you guy’s healthier

As for advice- make sure you have sun protection:- sunscreen, hat and covering over arms so you don't get burnt. Research where you are going to visit before you embark (an itinerary). Firstly, outstanding camera work Melissa! We really needed to see the texture of the icing and your close ups and steady hands were spot on. This is very similar to a chocolate sour cream bundt cake that I make so recognize Tom's love of this particular cake. It's not easy for me to find the clear Mexican vanilla up here in Canada but when I have had it - it is unlike any other. While I loved every second of this video it was the frosting recipe that sparked my interest most and I will certainly give it a try this fall (when it is cooler). A tip for mixing up the frosting. Put your butter etc in first and then slowly add the powdered sugar cocoa mixture. It will be less powdery messy.

For the frosting, start by creaming the butter, then add the sugar/cocoa mixture in small amounts, alternating with the cream (also at room temp). This will allow more control over the mixer with less “dust up”. You will also end up with a creamier, more easily spread frosting. For piping, load a pastry bag with frosting and chill for 10-15 minutes. This will give you crisp decorations.

It was a little challenging to decorate all the layers with frosting, which by the way came out soooo good and not to heavy. The cake was tender and very soft, the texture came out very nice and light. Thank you for explaining thoroughly and also telling us the WHY to use certain ingredients ( Like the coffee needed be really hot! lol!) I was surprised myself on how good that cake was. This was my daughter who died of breast cancer at 32.... favorite cake. I named it Angie’s Awesome Chocolate Cake. I make the frosting a little different, but that’s ok.

I loved everything about this video, and can't wait to bake this cake. I love making cakes. I have made that icing before and it is delicious. I've watched many videos of people baking or cooking things, and to be perfectly hones, this is the best one I have ever watched. He was so engaging and just felt like a neighbor showing me how to do thi. He did not drag the process along like many others do. Thank you, and I will bake it tomorrow, becauise I have to go get more Hersheys. I used the last when I made the icing last week.

I have this exact recipe…. It is truly the VERY BEST CHOCOLATE CAKE. Dry instant coffee or instant espresso.

Tom calls for Espresso Powder. I would use 50% more if using Instant Coffee. Or you could always use a shot of Espresso if you have an Espresso Machine

I made this cake today. We are bakery snobs, I HATE most bakers cakes, far too thick, rich and dense. I have not met a cake that I’ve liked yet…until this cake!! My entire family said this was the best cake they’ve ever eaten! I have to say, it’s huge! My cake toppled over because it was so tall 🤣 next time I’m going to take the third layer batter and make cupcakes instead of the 3rd layer. This was THE BEST cake ever! And your video showing how to make it was so crystal clear and really made this process way to follow along! Thank you AGAIN for yet ANOTHER fabulous recipe and tutorial!! Oh my goodness!!! I too aam a chocoholic❣❣❣ I really appreciate the way you go step by step, nice and slowly, explaining as you go. I'm so excited because I am going to bake a chocolate cake for our grandson's 1st Birthday, my son & his wife want chocolate so they can videotape him digging into his little cake and getting it everywhere LOL! My 2 son's did the same on their birthdays 😁 Thank you for your video, my mouth is watering already! I worked at a bakery and they froze the layers making it possible to easily cut them in half and also brush the crumbs away. This was usually for two layers and after cutting, it would be 4 cake layers, 3 filling. I just want to add that you definitely know how or have a gift to be able to frost a cake!!! Hey there - I'm 75 and have baked so many cakes I should be ashamed "because" it means I probably helped myself to at least one slice. Hello I really love your chocolate cake recipe and am going to bake it next week. I have a question. Do you bake the baking forms of cake mix 1 at a time or 2 baking forms at a go.. Is it alright to let it sit on the counter for 30 minutes while the others bake. Also, is the baking powder , a heap or a level teaspoon. Today is Aug. 17 th, 2023.... I made the cake. It is DELICIOUS ! .....one thing though....I was a cup and half short of cocoa so I compromised with a half bag of melted chocolate chips for my frosting. Next time I 'l l have my ingredients which I thought I had. Still family loved it. 🙂👍🙏

Like what you shared about the nake even strips. I use to make wedding cakes and had to make my own. Now my grandaughter makes cakes so I need to get her some of these. Can't wait to try the cake.
