Oh man I made this for my family tonight and it was absolutely delicious!!! My oldest Grandson who is an addict of the cheap bags of Top Ramen (which we dont eat anymore and he whines about it all the time) was in HEAVEN, said it was seriously the best keto meal I have made so far (he says that with almost every new keto dish but this I am confident is definitely his fav). My youngest Grandson had his WHOLE bowl devoured before the rest of us for sat down, my Daughter who loves a specific black garlic ramen from a restaurant she introduced me to, was elated and asked if I would save her some for work tomorrow because she loved it so much & my Husband said it was amazing!!! Those of us that like heat added a black garlic oil chilli paste to it which we got at our local Asian market and man it took it to a whole new level of YUM!! I also cut the seaweed into small strips and added it to the bowls which was really good and the seaweed was so good just dipped in coconut aminos and sesame oil!! Oh I did do half coconut aminos and half soy sauce only because soy is a legume which can cause inflammation and is recommended as one of those things not to eat or eat sparingly. Since we aren't vegan we ate it with shredded chicken thighs that I had done in a simple brine and instant pot for the week!! Seriously I needed this recipe in my life thank you so much and my family thanks you!!! Wish I could add a picture so you could see it, it was beautiful!!!

I made it yesterday, OMG it was sooo delicious! I did not have kombu so I just added vegetarian broth stock and I think it worked well. I also used fresh shitake mushrooms. Thanks Fan for this recipe and many more that I've already tried too.

I find these noodles at the chinese grocery. I prefer to rinse them very well and put them on paper towels to remove more moisture. Then put them in a dry frying pan to remove even more moisture rather than boiling them, but don't let them brown.Then I add marinara or meat sauce and have spaghetti

This ramen looks so delicious and healthy! I am glad to know that you were born in my home country! In Taiwan, shiwataki is called 蒟蒻 [ jyu ro]. I often cooked it with vegetables when I was on diet. You are right, it causes bloating, don't eat too much at once.

Hi fan, I like to share this with you about the shirataki noodles, usually I will pour soy sauce over the noodles and let it rest for 15 mins before cooking it. And the noodles taste so yummy, be if frying it or making soup. And for the dry noodles, I will add your chilli to fry it and it taste great. Thanks again for sharing.

I tested these types of noodles (they sell them at my local grocery store as Miracle Noodles) but I found them to have a weird, almost cellophane-like texture when bitten into. Stinky smells, stinky smells!!! From what I understand that can be alleviated by rinsing them with apple cider vinegar. Maybe after cooking them in a broth, they'd become more forgiving?! The real joy in watching this video though is your voice, I could listen to you all day =) Thank you for this recipe.

I bought 30 Japanese Shirataki from amazon. The expiry date is 17/8/2021. Does Shirataki really have an expiry date? Can I keep it beyond that date and for how long? Thanks

It should be fine few weeks past sell by date, but beyond that you might find the noodles starting to disintegrate and break up. I found this out through personal experience :))

Don't your local grocery store sell fresh shitakes? I see them everywhere here in Montreal (Canada, Québec Province). I can't stand the rehydrated mushroom of any kind. It's night and day with fresh one. I hope everybody can have access to that king of mush. They are amazing. The most meaty, crispy, savory of all (when panned). I never understand all japaneses who use them dried out. They love fresh ingredients so much... and perfection.?!?? It's a mystery for me. I know they are cheaper... but damn! These noodles are called as well konjac noodles. To avoid the strange back taste you’d better soak them for a couple of hours and change water a few times. 😄 Then they are perfect.

Are kombu and nori the same thing?

In that they're both made of seaweed? Yes. But kombu is dried kelp seaweed "leafs", and Nori is processed into thin sheets, and often seasoned & flavored, not something to make broth from, but added later like a condiment

To get rid of the fishy smell in the shirataki/konjak noodles. After rinsing the noodles soak them for a few minutes in water which has 2-3 teaspoons of vinegar or lemon juice added to it.

I hope u don't mind me practicing a little 中文 there, I'm so thankful you shared this recipe, I was getting so bored of my regular go to dinner, I was even getting into the millet/spelt ramen noodles but I had no idea how to really make plant-based food taste this good, for all these years. I started to recently hate cooking, but when I tried this out, I tried with even half of the ingredients and I was impressed, so I went back and got the tofu and even the sesame oil and I have been having so much fun trying to perfect it. I've made it for the last several nights. And it has not gotten boring. Thanks :)

I used the Gaylord hauser konjac noodle brand here in France. It made me nauseaus for a whole day. On the package it said, it was ready to use, no need to rinse it. Even though i rinsed it, it made me really sick. So yes, do be careful with the brand you choose.

Give it another try, sometimes u need awhile to buildup the intestinal buglets necessary to digest them. I found on my 2nd dose, I had much less bloating & intestinal distress 😜

Hi Susie, look up Amazon. I get my shirataki from Amazon UK. It's quite commonly available now. Or google and see if there's any Asian supermarkets near you. Most of them stock it.

Soy is an estrogen mitigator; most hormone based disorders are due to estrogen over-production or accumulation from exogenous sources, like animal products. _Those_ hormones jump the species barrier and get assimilated by our bodies, so IMO soy is hardly the thing to worry about. Allergy excepted, of course.

Most women are estrogen deficient. Soy, if organically sourced, is a great way to help that problem. You could refer to Thomas Delauer for more information on the subject of increasing estrogen using food rather than man made medicines ☺

Cant find ingredient. Amazon doesn’t have that black vinegar or the noodles.most have oat flour in the noodles. Your brand isnt anywhere either. So disappointed!
