I rinse the noodles then dry saute them until they begin to squeak. That dehydrates them slightly so they soak in sauce well. Usually I sauce them while warm with soy sauce and sesame oil then package them into individual servings and stash them in the fridge so they’re ready to assemble into a soup later. When making sesame noodles or peanut noodles I just rinse them then tip into the dry saucepan and add the sauce immediately so it warms and coats the noodles.

Three years later, I find this Ma Jiang noodles recipe, made it, and just watched the vid. again while eating it. And even though I forgot 3 of the ingredients, including the garlic (I had to throw powdered garlic on top!) - it was delicious! And so quick. Next, I'll try the "creamy sticky noodles", and will definitely have a go at the chili sauce recipe, too. Thank you so much for these inspiring keto recipes!

I'm literally eating shirataki noodles while watching you make a shirataki noodles dish lol. Years ago I was intrigued by them being zero calories and that are called "noodles"( I love noodles, and pasta) but I was put off by the smell (as you said) and texture wasn't exactly that of pasta (I'm italian). But since I've been on keto for almost two years now I've acquired a taste for them. I don't eat traditional pasta anymore and I absolutely love shirataki noodles now. I've bought so many different kinds of them on Amazon too. This recipe for Ma-Jiang looks so delicious Fan.

Hi! Ive made a version of this a couple of times and plan on making some this week. I use the tofu shirataki noodles. I followed your cooking instructions and its made it such a huge difference in the taste. I am a huge fan of yours and will be trying more of recipes.

I made your chilli oil a while back and enjoying it by adding to stirfries but I did make it for this recipe. One reason for another, I haven't got round to trying this and finally the day has come...I thought standing in the kitchen...and realised I was out of tahini! I got myself all psyched up and whitetail already in the pot warming up, what am I to do...improvise. I mixed peanut butter, almond buyer then cashew nuts, then added spy sauce and balsamic vinegar (was in my cupborad...random I know), and just for a good measure, added some ginger and coriander! Also added the chilli oil in here and quick zap with my Ninja. A quick tasete, and it actually tasted really good. The moment of truth in with whitetail and some spring onion, it was very tasty. I have to restock Tahiti and try this again with the right recipe but it was very good nevertheless. 👍😄 Thank you Fan. 💝💯

Oh. My. Goodness!! This is what I made for dinner tonight, and I cannot thank you enough. Absolutely delicious!! I purchased the exact black vinegar from Amazon, and the noodles I got weren't smelly at all. It was a bit heavy on the garlic for my taste, but not so much that it was unpleasant :) I'll be making the chili paste when I run out of the yummy stuff I purchased at a local market. So many recipes I was to try!! Coffee jelly, and focaccia are high on my list. Love your format and presentation - thanks for sharing with us!!

The thin strips are typically called "matchstick", shredding is what you do to cabbage or the guitar :) This looks awesome, gotta find those noodles and make it ASAP. Thanks.

I think I need to try shirataki noodles again. I had some that completely wrecked my tummy. Maybe I got one with added oat fiber though. Not certain. But this looks so very delicious! Thanks for your wonderful recipes and beautiful spirit!

Chinkiang vinegar is super common and easy to find in Canada, interesting that that's not the case in the UK! From personal experience, be a bit careful the first time you try shirataki noodles. I'm fine if I eat a half pack but one time I ate most of a pack and had a very unpleasant night. Of course people vary in their tolerance for it

love this. my local store usually carrys these noodles but sometimes they r sold out. So yummy. Noodles r my comfort food. ( A little aside My son lives in Taiwan loves the food there. )..... I wish u would write a cook book as your recipes r the best keto vegan for me.

I have tried konjac noodles. I tried all ways to get rid of smell on them (vinegar while boiling) and the texture, and still I can't take to them but that sauce looks yummy.

Just had a look on Amazon UK and the Shih Chuan black vinegar is the only one without sugar and suspect ingredients.

Yes there's a very small amount of sugar in the brand I use. 3 carbs per 100ml isn't too bad for me but by all means use a different brand if there's a sugar free one.

Oh that looks soooo yummy 😋! The only thing that I do to get rid of the smell of the noodles is to rinse in very hot water a few minutes.

Rinsing wasn’t enough for me but the salt removes the liquid in the noodles that probably comes from the packaging.

I have eaten those type of noodles may times. I have always rinsed them and cooked them in a hot dry pan first before using in a recipe. I might try this recipe someday.

This 芝麻酱sauce looks so creamy and fragrant to coat on the shirataki noodles. Thanks for sharing this recipe using Chin Kiang vinegar. By the way, chin Kiang should be hokkien dialect (min nan 闽南). 😊 Kudos! I'm going to try it.

@@HeavenlyFan sure thing! I have already made the chilli sauce following your recipes. Only Problem is I use coconut oil (Medella coconut oil for cooking). Now it's very hard to dig when taken out of the fridge. Will probably try olive oil next batch.

Haha coconut oil solidifies in lower temperature so olive oil is a better option. It also tastes great.

I make 100% peanuts butter in VitaMix Could not be easier and 1/2 the cost of store bought. Is black vinegar the same as balsamic.

Hi Fan..I do love your recipes and whilst I trust the information you give out I thought carrots were to be avoided as they are about 7g carbs per 100g and cucumber is about 9g per half a cucumber and a bit in the spring onion too. I see you say this dish is zero carb - how do you do that with these ingredients in it. I don't mean to upset anyone I just get so much conflicting info on keto sometimes- please help! Hi Honey bee, the zero carb is actually referring to the noodles. Sorry if it's a bit confusing. I eat plenty of cucumbers and carrots though. Considering we're already cutting off 99% of foods that damage our body being on keto vegan (sugar, starch and animal products) I personally don't restrict these veggies. But of course you can replace them with other greens you like. Cooked/raw spinach or avocados would work great.

I've heard some people say use lemon juice to get rid of the smell of the noodles, boiling them with lemon juice, then fry them with lemon juice. Have you tried that?

Hi there, watching in the US ... here we have tofu shirataki noodles that are fantastic by House Foods ... I buy them at an asian market near me ... the spaghetti or angel hair would both be fantastic in this soup ... hope you can find a way to get them, as they are vegan & a definite notch above plain konjac/shirataki noodles ... cheers !!!

I will caution you that unless you LOVE, LOVE, LOVE, garlic do not add this much. This is an awesome recipe and I really like garlic but when I made the peanut sauce all I could taste was garlic so I had to keep adding tahini and peanut butter until I could taste it as a peanut sauce.

Hi Alina, you can replace it with other nut butters such as almond butter if you're ok with it. Or you can simply add more tahini (2 parts). It will still taste really good x

Yes. The recipe is based on ratio, so if you're using a tablespoon as measurement it would be two tablespoons of tahini. Enjoy x
