This is how to make keto vegan quiche with crusty and light crust and creamy filling. What a great way to greet autumn with style.

INGREDIENTS
--------------------
QUICHE CRUST:
10"(25x 4.2cm) diameter flan dish
Pie tin I used amzn.to/2mEjijn
1.5 cup (170g) ground almonds
1/2 cup {50g} ground flaxseed
1/2 tsp Salt
3-4 tbsps Nutritional yeast
1/4 cup 40g Melted Coconut Oil
Water
FILLING (base):
300g Silken tofu (or soft tofu)
1/2 cup ground almonds
1/4 cup nutritional yeast
1 -2 onion
250g Mushrooms
Salt and pepper
Additional filling/toppings
Chopped spring onions
1 large tomatoes
2 courgettes
DIRECTIONS
------------------
QUICHE CRUST:
1. Place all QUICHE CRUST ingredients (except water) in a mixing bowl and mix well.
2. Add cold water small amount at a time (few drops) till the mixture can be bind together into a dough ball.
3. Spread the mixture on an 10"(25x 4.2cm) diameter flan dish till it's fully covered.
4. Bake in 180C/350F pre-heated oven for 15mins
5. Leave to cool for 10min before removing the flan dish.
QUICHE FILLING:
1. Saute chopped onions till caramelised, and do the same with sliced mushrooms till nicely brown. Leave them aside too cool.
2. Mix silken tofu, ground almonds and nutritional yeast in a bowl till smooth. Season with salt and pepper.
3. Add in caramelised onion and mushrooms in the mixture and mix well.
4. Pour the mixture in the baked (and cooled) QUICHE CRUST and spread evenly.
5. Arrange sliced courgettes, tomatoes and basil leaves on the quiche filling as desired.
6. Bake in 180C/350F pre-heated oven for 40mins

Great presentation and a super tasty looking quiche. Thank you. It may not be Keto, but I would replace the half a cup almond flour for the filling, with quarter a cup chickpea flour mixed with quarter a cup water with a dash of tumeric. Chickpea flour is a great binder and works like eggs. It is perfect mixed with tofu for quiche filling.

I'm keto but a carnivore so I use eggs liberally. I think I'll add an egg for the crust and cream cheese for the tofu. Mind you it looked delicious.

I live in the US and I have been looking for the exact same natVia sweetener you’re using with no hope to find it because I literally looked everywhere. So, can you please help me order it from a trusted place? I read about it and I love that there are no additives to it and that it’s basically a natural sweetener derived from the plant species Stevia rebaudiana (candy leaves) from Brazil. I am looking for the same one with the “organic seal” on the canister. Your help would be so much appreciated.

Needed a dish and this was just perfect! My mouth was watering! I’ve watched you for some time and I sure like most of your dishes! You always decorate them just fabulously! I don't count macros myself so I can't offer you accurate numbers. I simply follow the LCHF(moderate protein) principle and just watch how my body response. It makes life easier!

Love your channel, vegan & keto, PERFECT! Hope you don't mind a suggestion. To add an extra cheesy flavour to food, use asafoetida. It is the equivalent of adding a particularly smelly parmesan 😊

Can't wait to try this! What's the reason we take the crust out of the pan before adding the filling? Would the crust get soggy if we bake the quiche in the pie pan?

Good tip about not letting the crust be thicker in the corners.

You can leave the crust in the tin for sure. I prefer taking the crust out to make sure it's been bake perfectly :)

Vegan Keto has come a long way since I tried it about 4 years ago. I couldn't afford it because of all the replacement ingredients I was reading about. I'm on Food Stamps so it didn't fit inside the budget. But once in a while I can, and that's better than nothing. This is really beautiful and simple. Thank you for all you do. YASS!!! this is exactly what I was looking for ! just because I'm known for my extraodinary vegan quiches that I absolutely adore playing around with and just as I was thinking about looking for a keto vegan quiche crust KZbin recommended this video ! (google is now reading my mind which is weird but also satisfying my instant gratification needs haha) I can't wait to try this, especially with some of my "old" quiche fillings. At one point I wanted a vegan quiche that would be blood red ! tomatoes didn't do it so I went for red beet juice and sauteed veggies and omg ! it came out looking like strawberry jam ! not even kidding and it was spectacular! I know a quiche may look intimidating but the second you start one and you realise it's actually super easy, the possibilities are literally endless !! and it keeps quite well (even though it doesn't usually survive long!) and it's just great to have one a raised cake platter to look at and nib at for breakfast and lunch and well yeah, it won't survive very long haha

A bit confused about your measurement of 1 cup. I understand one cup = 200gms. In this recipe you said 1.1/4 cups = 175 gms. Can you clarify please. Love your site and recipes. Thank you so much.

I suppose you could keep the crust in the dish as a support. I sometime pre-bake the crusts and store them in the freezer till I need them so I tend to bake the quiche without the tin.

Just made this. Meticulous instructions and it tastes devine! However, while I was admiring my effort with the perfectly formed crust, I turned around and then looked to see my creation had completely folded. Boo hoo! So the finished result was a bit of an assembly job which still tasted GREAT! Wondering if it would be better for those of us without a detachable base tin to simply add the filling to the pan without removing the the crust. I also have loads of filling left - any ideas what I could use it for very welcome.

Oh, No!! Help Fran I am allergic to Soy, please tell me if there is something else I can use for this recipe that is not Tofu? So far I will be able to make most of your recipe but I can't do Tofu, is there a replacement that is Keto Vegan? Just dying to eat quiche

You can try doubling the almond flour to help the filling to set. I'm yet to try this but I think replacing tofu with mashed avocado might be interesting as it provide the same creaminess. Let me know how you get on x
