Hey ya'll, I'm Jess from Roots & Refuge Farm
Welcome to a place that feels like home. A small farm with a big family. We hope you'll pull up a chair, grab some coffee and visit awhile.
There was a time that all I wanted in the world was a little farm where I could raise my family and grow our food. Now, that is exactly what exists outside my door. In watching it unfold, a new dream was formed in my heart - to share this beautiful life with others and teach them the lessons we've learned along the way. Welcome to our journey, friend. I am so glad you're here.

Smoked chicken, smoked turkey, smoked ham bones, and smoked brisket trimmings make the BEST soups. Even if you have 1 smoked carcass and other regular ones. SO much flavor. Delicious

SO!COLD! here in the MItten! I used to bake at an Inn. The chef had duck breast on the menu for a season. He found out he could buy whole ducks cheaper than the breasts. He let me take home ALL the carcasses. I was rich in duck for almost a year!

Every time I walk outside in this extremely frigid weather, feeling the ground's icy crunch under my sole, instead of complaining about the cold I imagine the expiration of many garden pests that did not bury deep enough in the ground to escape the bone-chilling cold. On the topic of when others "put things back" in a different place than you normally keep it - I found it's better to remember they WERE helping rather than focus on the momentary frustration of having to look for something. I find myself asking others in my household if they can show me where they put something that I cannot find in a few moments. When they locate it for me, I usually say something like, "Oh, I normally keep it here." (And show them where.) But, as ever, I thank them for their help and we move forward. 😊

I used to work in a small commercial kitchen at a poultry farm and one of the owners would send a few turkeys every year to be smoked and we would cook it for a family meal and then make stock with the carcass (it was not cheap to get the bird smoked and we definitely didn't want to waste any! ) and one of my favorite soups to make with the stock was lentil soup with andouille sausage, delicious! I'm glad you're hanging in there with the cold! Was 7 and felt like -5 here in north central Massachusetts this morning! Take care and keep warm everyone!

Even us grocery store suburbanites can do the extend the bird thing. We figured out recently that we got 16 servings out of one Costco roasted chicken. That is massive for the two of us. We ate a couple of chicken dinners, several chicken sandwiches, several chicken salads, then we picked what was left off the carcass and boiled what was left and made chicken stew by adding some veggies and the chicken back in and we had enough broth left use as a base for spinach soup. Talk about a value! I wish everything we bought gave us such results plus all of it was delicious.

So I am now using blue painter's tape and a marker to label jars and lids. It is easy to tear off a piece and stick on to label and then also easy to remove when you need to change something. Before I was always looking for my labeler or writing over/adding stuff already there written with a permanent marker. This is so much easier. Will check out Taylor's channel.

Last year I managed to get 3 Turkey carcasses. 2 were 14 - 16-pound turkeys that were deep fried and the other was a 26-pound Turkey that I smoked. That was the best Turkey stock I have ever made. I also took some of it and the shreds of meat and made Turkey pea soup. Tasty stuff right there.

There will come a time (and I know you know this so well...) that searching for the things lost in your kitchen will seem so precious. My now 35, almost 36 year old now CLEANS the kitchen for me on the rare occasions he eats here, but I well remember when the Sunday cook-ins of he and his friends would leave the kitchen looking like a tornado touched down!! Red tart canned cherries went on sale at Christmas time and I splurged on 4 cans. We had 2 cherry pie lovers for Christmas dinner and we both live here. I got the idea to make cherry jam and have pie on toast daily. It rendered 5 pints of pure joy. One of the best ways to eat desert rice is with cherry jam. I have been singing God's praise over all the inspiration that I find here, the cherries being on sale and having pumpkin from the garden for the most requested pie at Christmas.
