Chefs are serv safe certified and trained this is a requirement for most restaurants especially high end ones. The regulations for hand washing are extremely thorough. If you touch your hair, face, clothes, money, cigarettes, equipment, ready-to-eat food etc you must wash your hands before handling food, even when changing gloves you must wash your hands before putting on another pair and handling food again. This is the basic cleanliness standard for any restaurant with serv safe certified and trained chefs.
