One question I have is: why were the sample plates still in the kitchen while service was going on? Weren’t they just there in the first place to give the chefs an idea of what to make? Wouldn’t they be removed after a while?

Gloves can actually be more unsanitary if they are not used correctly. So if the kitchen is clean and they wash their hands often and when they are supposed to, it is fine and normal in the industry.
