I'll speak from my experience working in two different pizza shops when I was in high school and university. These pizza challenges are designed to fail. I don't know if it was the producers, or just the fact that the contestants were put into their own mental box [We have a pizza oven. We have to use the pizza oven!]. To use the pizza oven, the crust needs to be a lot thinner, the oven has to be a lot hotter (750-800F), and they can't crowd the oven. Everytime you put a cold dough on the oven floor, it cools it down and will not cook properly. For that challenge, I would have put a pizza dough into a well oiled, screaming hot cast iron pan, fried it on one side in the convection oven (450F), taken it out, flipped it, and then sauced and topped it with something very simple, and finished it in the convection oven.
