Hemingway Casserole
Ingredients:
2 cups cubed eggplant (peeled and cubed)
2 cups yellow squash - sliced
1 green pepper (cut in rings)
1 large onion sliced (sliced and separated into rings)
½ tsp. each of oregano, cumin, marjoram, and dill seed
3 cloves garlic - minced
2 tsp. of salt
1/3 cup olive oil
3 fresh tomatoes sliced in wedges
Instruction:
Preheat oven to 350°F
1. a layer of eggplant, 1/3 of the oil, ½ tsp. oregano, 1/3 of the salt
and 1 garlic clove
2. a layer of squash, 1/3 of the olive oil, ½ tsp. cumin, 1/3 of the
salt and 1 garlic clove
3. a layer of green pepper and onion, remaining 1/3 of the oil, ½
tsp. marjoram, 1/3 of the salt and 1 clove of garlic
Cover and bake at 350°F for an hour. Remove cover, add tomato
wedges and ½ tsp. dill seed and bake until tomatoes are cooked
(about 30 additional minutes).
