That lamb intestine dish reminds me of Turkish kokoreċ where the lamb is wrapped in intestine and cooked over a spit. I was born in this magnificent city of Madrid back when we had a base there at Torrejón and after 30 years this January I’m coming back and taking my Southern wife to experience it. I’m glad Amadeo is still doing his thing. I was looking at either El Charoles or La Bola for Cocido Madrileño since it’s gonna be cold in January. I want to clarify something. There is NO street food in Spain because it is prohibited by law except if you go to events called “ferias” and you pay for the right to sell food in an open market. Lived in Spain for quite a while (Madrid). It is the most overhyped kitchen; basically most of the food taste quite blant. Going to restaurants for a real meal is really disappointing…
