Hallo from Bloomington, Indiana, USA. Since you're using tortillas, I thought this would be more of a Mexican breakfast dish. In that case, I would substitute Chihuahua cheese for the Mozzarella cheese. I didn't expect the spring onion, but I'm sure it works. When I make this, I'll use Chihuahua cheese. And, I'll probably add cilantro. Vielen Dank!
