This method provides juicy succulent turkey breast that anyone can easily achieve
This turkey is quite fool proof yet simple to do, no basting no covering or gimmicks, no wet brining with special equipment. The advantage of roasting the breast only on the bone, is that it doesn't need as long to cook. Legs and breasts require different cooking times, which is always a hurdle in achieving the perfect turkey. This recipe uses a dry-brine technique which achieves similar results to wet brine by sprinkling kosher salt and letting it sit uncovered in the fridge for 24 hours. The salt draws out the meat juices by a process called osmosis, then the brine is reabsorbed into the meat keeping it moist and also breaking down tough muscle proteins. As the turkey skin hasn't soaked in brine water, you get a crispier skin and a superior flavoured succulent meat.

Just cooked a 4.5 pound organic free range turkey breast yesterday for Thanksgiving using this method. Let me tell you.. it came out amazing! I was worried that it was going to be too salty but it wasn't. Oh, and I added some fresh thyme and rosemary to the brine as well.

Turkey was fresh bought at the farmers marked from a local poultry farm in Lancaster, Pa. Followed your directions using Kosher salt.

Can i roast the turkey breast bone in on wednesday before thanksgiving day to avoid stress? Then, after roasting, should i slice the turkey before put in fridge overnight or leave it whole? How can i reheat the next day brfore eating? Thanks.

@@recipe30 thank you. I have a 5 pounds and a half turkey breast bone in roasted the day before thanksgiving. On Thanksgiving day, how many degrees farenheit should i heat the turkey and how long? Can i heat with chicken broth in the bottom of the pan instead if gravy? Thank you.

+Ron Fedora You need to use kosher style salt or it can be a little salty. Also be careful that sometimes bought turkeys can already be injected with salt, usually called "Self Basting". I never rinse mine, and it's perfectly seasoned but if unsure, then sure rinse it off.

George Texstel I always check the label. Some only have 3% water added, and these will work way better than those showing 14, 15% and up. It will say “water added”. And do not use table salt.

The turkey I bought apparently comes "pre marinated" with an unspecified marinade, it doesn't visually seem like they're marinated it so I assume they've pre brined it... In that case i'm just going to add some seasoning to the butter, I assumed you were using unsalted butter or at least salt reduced given the brining...otherwise I just wasted 4 dollars =\

Follow up, this was my Christmas turkey recipe go-to. Worked a treat, I seasoned the butter and put and onion and fresh herbs into the cavity though just as a deviation. I did need to turn it 180 after an hour as there wasn't enough heat flow, probably something to do with the turkey being a bit too big to properly circulate the air. Apart from that the recipe was on point, thanks.

krisisnkaos it’s cross contaminated when you don’t wash it making all the bacteria and blood mixing with everything you touch! Use LIME or Vinegar to kill all bacteria! Enjoy your salmonella cooked food!

WAY TOO SALTY!! It was barely edible! 3 TBSP of flour is not enough to thicken 3 C of chicken stock and 1 C of wine, no matter how long it simmers.. I will NEVER add wine to gravy again. It was awful.

If you wash away salt mixture it will not be salty. The simmering gravy needs time to reduce to have that nice thick glossy consistency and strong flavour. Of course it will thicken, I'm happy to help you and show you the steps Rita.
