Texan here. Strong effort. I understanding the need to adapt food to regional tastes. I was nodding my head in an agreeable manner for the most part. The only thing that truly gave me pause was the use of frankfurters. Those aren't anywhere close to the sausage we have in Texas. Most importantly, everyone knows Texas for brisket, but only Texans know the sausage is about as important as the brisket. We get sausage from our Czech and German settlers. They're part of what makes Texas, Texas.

This is nothing like Texas BBQ! to check ribs you just pick up the rack and bend it if the top cracks then it is tender and done. if the top won't start to split when you bend it then it's not done. 16 hours at 200 to 260 for large cuts without using foil to check a brisket to see if it is done just slide one side of a set of tongs between the top and bottom layer if it comes out with clear juice it is done if it has blood it isn't. That is just the start, i was a pit master and block man and trainer for around 35 years.

People sneak off with it. Give it 1-3 cold refrigerator hours to marinate. More is okay but changes the texture and you loose too much salmon flavor. In fact, I'm gonna pan saute that salmon recipe in a pat of butter now. Finish with 1 centered light spray of lime juice for the last 45 seconds. Make ya wanna slap somebody... On the back. No violence. 😁 Dudes, serve it with smoked turkey rice and asparagus spears and favorite wine and your woman will be ready ALL NIGHT! You're welcome. The rub looked spot on. The brisket looked like it was cooked nicely. Not sure if it was tender enough to pull apart as easily like Texas brisket, but it looked very moist. The pork ribs looked great! The pulled pork looked good...EXCEPT...you forgot the "mop sauce" which is an apple cider vinegar based liquidy sauce. I never seen a mushroom soup in Texas. I was expecting a hearty country chicken soup, similar to chicken noodle soup except I was wrong. Bummer! Word of advice: apply the bbq sauce only after you flip the meat, and serve the sausage as is when taken off the grill. It could have had a better authentic presentation😞

Superb food Texas BBQ food, for a commercial restaurant in Korea... I know it may be more difficult, but to get those briskets to jiggle and feel tenderized, ya gotta trim them better and use peach butcher paper instead of aluminium. It's important to let the briskets continue to cook in a cooler, part of that pressure process is what softens the meat.

Man does this take me back! I worked at a famous BBQ restaurant in Texas form age 12 through age 18. The BBQ was smoked in a pit using Oak and Hickory. I have seasoned tens of thousands of pounds of Brisket, Pork Back Ribs, and made Chopped Beef out of the brisket trimmings and in house BBQ Sauce. I made the Potato Salad 0ne hundred pounds at a time and used a commercial Hobart chopper to chop up the cabbage to make Cole Slaw, which I also made. I also made the BBQ Sauce in a big Rubbermaid trash can(never had trash in it). I worked for $1.50 per hour. I'll guarantee you I know how to cook Texas Barbecue and everything that goes with it.

What did they do with the trimmed fat? I put it on the brisket to give the meat more flavor. Remove when cooked. For additional flavor, try covering that brisket with bacon strips. The pellet grills burn cleaner and temp is easier to control. As far as the ribs, smoke it the same but without the rub. When it gets to about 160 degrees, pour teriyaki sauce over it, cover and bake until temp gets to 185. Great eating!
