@@ImjustKelly73 I know this is 2 months late, but if you were still wondering it's because the quality of their meat is much higher than American meats. The reason they tell you to cook everything thoroughly in America is because most meats are mass produced and full of hormones to grow quickly, resulting in meats that are not safe to eat raw. The Japanese, and lots of European countries too, have higher quality meat, so the risk of getting any food borne illness is much lower. That is why they can eat raw beef, chicken, and fish.

@@halo53211 While you are no doubt correct about hormone use in North America and their potential impact on people's health, they are not the cause of concern for under cooked meats. With chicken specifically, the risk is Salmonella and other pathogenic bacteria which remain alive and active if the food is not cooked to a high enough temperature. Though care preparation and butchering practices can considerably reduce bacterial contamination of raw meats, it would be very difficult to produce sterile meat regardless of how high quality it is.

Keep in mind the quality standards of chicken, pork and meat in general in Japan are LEAPS and BOUNDS beyond the USA, for the most part. They eat chicken sashimi (raw) in Japan because the quality and safety are that good. Doing that in the USA would be like playing Russian roulette.

I can't say about the chicken as I couldn't see it well enough (I'm sure the steaming time it had was sufficient) but the pork? Assuming the pork is being sourced from places with high quality modern farming practices? It's fine to eat pink. Gone are the days of having to over cook pork.

Thought the meat was undercooked when it was served but it was timed perfectly as it had the slightest pink when Aden picked it up and I'm sure the meat was perfectly cooked by the time it reached the palate. BTW, does anyone else think that the sauce in the middle resembles McDonald's "special sauce"? I honestly think that might work as an option for this spread.

No. The USDA recommends cooking pork to internal temp of at least 145 which is medium rare. You would be correct on chicken though. Chicken has an awful crunchy texture when under cooked anyways. So I wouldn't even if it was safe to do so.

Well with a degree in cooking i was thought that only red meats can be cooked medium rare and below, not white meats, the pork would still be juicy If it was cooked medium, which for pork is fully white but not overcooked.
