High Protein Chickpea Sandwich
Servings - 4
INGREDIENTS
Soaked white chickpeas - 150 grams
Water - 500 milliliters
Salt - 1/4 teaspoon
Hung yogurt - 140 grams
Onions - 60 grams
Green chili - 1 teaspoon
Salt - 1/2 teaspoon
Red chili - 1/4 teaspoon
Chaat masala - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Coriander - 1 tablespoon
Coriander - 6 grams
Mint leaves - 3 grams
Onions - 30 grams
Coriander stems - 2 tablespoons
Green chili - 1 teaspoon
Salt - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
Lemon juice - 1 teaspoon
Water - 50 milliliters
Multigrain bread slices - 8
Lettuce - 30 grams
Tomato - 80 grams
Cucumber - 60 grams
Melted butter - for brushing
PREPARATION
1. Take a pressure cooker, add 150 grams soaked white chickpeas, 500 milliliters water, 1/4 teaspoon salt and cover it with lid. Cook until you hear 2 - 4 whistles.
2. Open the lid and remove it from heat.
3. In a bowl, add boiled white chickpeas and mash them with the help of food masher.
4. Add 60 grams onions, 1/2 teaspoon salt, 1/4 teaspoon red chili, 1/2 teaspoon chaat masala, 1/2 teaspoon cumin powder, 1/4 teaspoon black pepper, 1 tablespoon coriander and mix it well.
5. In a bender, add 6 grams coriander, 3 grams mint leaves, 30 grams onions, 2 tablespoons coriander stems, 1 teaspoon green chili, 1/2 teaspoon salt, 1/2 teaspoon dry mango powder, 1 teaspoon lemon juice, 50 milliliters water and blend it well.
6. On a board, place 2 multigrain bread slices, add prepared green chutney on it and spread it evenly.
7. Add some lettuce, prepared stuffing, tomato, cucumber and cover it with another slice.
8. Place it on a griller and brush it with melted butter. Grill for 2 - 4 minutes.
9. Remove it from griller.
10. Place it on a board and cut it into half.
11. Serve.
