Enjoyed the video. Tonight I wanted fried chicken using boned thighs. I'd read about Almond Flour and went to the fridge and got a bag of Almond Flour, I THOUGHT oops, but after I cooked the thighs, I realized I had used Almond MEAL instead by mistake. I did egg, Almond Meal to oil. Actually, they turned out, not bad at all and the breading stayed on. I CAN'T WAIT TO TRY BOTH OF THE RECIPES YOU JUST SHOWED US. You are the best. I use you all the time for recipe choices.

If you have problems with your "coating" sticking while frying, coat it all and refrigerate them for 20 minutes or so before frying. It sets the coating, let's the dry parts absorb the wet parts. I make double or triple batches and freeze them after the coating has set.

Recently I saw someone mix a cup of sharp cheddar with a 1/3 cup of pork rind panko that they just pulsated in a food processor, and they said that the ratio was perfect on tenders. Someone in their comment section also added that instead of putting the chicken into an egg wash and then coating it with that mix, they subbed it out for an avocado mayo and then packed the mixture onto that, and put it in their air fryer for 395 degrees Fahrenheit for 12 mins. I am very excited to try this very soon!

I mix all my spices and herbs into my egg wash. This helps to keep the herbs and spice from burning in the oil. I do a combination of oils. Usually Lard and bacon grease mixed together.

@@dana102083 Lard is pig fat (rendered or not) and bacon grease is rendered bacon fat. The only difference is bacon grease contains flavors from the bacon curing process, while lard is just the fat. Both fare fairly well in it's saturated, mono and poly-unsaturated fat numbers with the so-called healthy oils, and as an animal fat, both have no trans fat.

For air fryer, spray chicken on both sides, then put in refrigerator for at least 15 minutes before cooking. Do this for any "breaded" foods in the air fryer. Keeps breading in place.

Thank you for this! I've been doing the pork rind/Parmesan coating for several years now, and we Love it! I soak the chicken in the egg/cream wash for a few minutes with some hot pepper sauce added--the hot sauce tenderizes the chicken, but doesn't make it spicy. That coating also works very well baked at 410 for about 30 minutes for bone in chicken pieces--comes out super crispy and it's super easy. I like the oat fiber recommendation, too. Love your videos!

Love this. I mix protein and pork rinds for the breading, with grated cheese and parmigiano. Sometime drip bit of egg into Brading to make lumps before breading for extra crispy. Also consdider milk with lemon juice to make a buttermilk to pre marinade thr chicken . Great videos

For 1 lb of chicken: • egg wash (2 eggs + splash of cream) • 1/2 cup pork rinds • 2 scoops of whey • 1/4 cup nutritional yeast • seasonings of choice Fry in coconut oil (I tried avocado but it smokes for me). Perfect and super crunchy every time! And now I finally know what to do with that big bag of oat fiber I have! 🤣

Marinate the tenders in pickle juice A couple of hours and you have another knock off (Chick-fil-A). Does the whey powder dry on the utensils like cement?

Yes, the dill pickle brine is a great option! (I personally do not care for the pickle flavor that Chick-Fil-A chicken has, but obviously most folks do!) And yes, because of the egg wash, most anything you use for dredging is gonna stick to the utensils (and fingers LOL), The whey included.

add a few drops of tabasco sauce in the egg mixture. and in your chicken use a bit of lemon juice or vinegar ( I used to use a few TBS of buttermilk on my chicken fingers. but it is not keto recommended) much added flavor IF ya'll like that as a substitute. I also add a bit more cayenne pepper and chipotle seasoning to mine that what is said. SO thank you for this!! can't wait to make me some. but first I have to go out and get some whey protein and OAT fiber.

The wheat flour is 3g of net carbs per teaspoon and the oat fiber is ZERO grams of net carbs per teaspoon. The oat fiber is 100% insoluble fiber, which is subtracted from carb counts because it passes through the digestive system. So, the 3g of carbs in oat fiber doesn’t count toward your carb limit and the wheat flour does, plus the wheat has gluten, which is generally avoided on a low carb or keto diet. 👍🏻

Great video! I've tried some of these, not these exact ones. I do a blending of some almond flour and ground pork rinds. I like to add nutritional yeast flakes, which can add an additional flavor and crunch. I have not tried the oat fiber, so I'm excited to try that next!

I made the pork rind recipe with the oat flour and just some garlic powder mixed into the pork rind/parmesan mixture, and it is fantastic! I shallow fried some chicken tenders and pickle chips and it worked excellently for both. The pickle chips were a little salty though and I didn't even add any extra salt. So your advice to be mindful of the salt is spot on. Thank you so much for this.

We just finished supper, and tried this recipe. HEY HOWDY!!! Winner winner chicken dinner. We used the whey powder recipe...but realized our's was vanilla flavored. Guess what? It didn't matter...no taste other than the tiniest bit of sweetness. This was absolutely delicious, and we used your cookie sheet/rack idea, and it was perfect, no greasiness at all. You (and we) hit a home run and out of the park for this one. A real keeper ... THANK You so much for sharing it. :) Not a scrap of it is left :)

YAY! That's awesome!!!! (On the vanilla flavor, we had a great restaurant on the beach in Pensacola that served "Lobster Fingers" - basically a lobster tail split in half, covered in panko and fried. It's served with a vanilla-bean honey-mustard dipping sauce and it's so good I still think about it. So maybe the vanilla isn't such a bad ingredient after all! LOL)

Light olive oil (not EVOO) has a smoke point of 465-470 F. It works very well for frying. It also has a very neutral flavor profile.

Thanks for the whey recipe, and the oat fiber for the first dredge! I bake my tenders in a 350 oven, using avocado oil poured to a depth of about 1/8”. I flip them halfway through the baking time til they are golden, about 35 minutes total, adding more oil if necessary when I flip them. They come out nice and crispy, and I don’t use a ton of oil.

So when I used to fry stuff regular chicken fried steaks and chicken. Used to make a gravy out of some of the grease and crispy bits. I tried it with this recipe and it turned out pretty awesome.. Took a little bit of the grease with some crispy bits a little bit of butter. Thru in some almond flour and browned it (happened quick so be carful) Then I added milk and decided to put a little pinch, maybe a sixteen tsp of xanthum gum in it, salt and pepper to taste and simmered it down to gravy came out virtually exactly the same. Highly recommend.

I made homemade Keto chicken tenders a week ago and used "heavily seasoned" King Arthur Keto flour. I dredged the tenders in the flour first, then egg, then flour again. I let the flour hydrate before frying and they were great. I deep fried them in lard, come at me bro, they were freakin' delicious. Dipped in Sweet Baby Ray's buffalo sauce then into Marzetti's Chunky Blue Cheese Dressing... 11 out of 10.

Yes. All that wheat (the first four ingredients are wheat) in the King Arthur Keto Flour is delicious. I think most folks eating low carb and/or keto are doing so to avoid the health troubles associated with wheat gluten. But, yes. It’s delicious.

I made these tonight. Wonderful recipe!!! I did the protein powder recipe with a few kimchi flavored pork rinds added. I did forget to add the salt to the oat fiber. It was needed. But these came out AAAAAAhhhhmazing. I also used the dredging for zucchini coins. Those were wonderful as well. I think I would have only needed half of the oat fiber as I had quite a bit left over. Other measurements were right on. I will definitely be using this recipe again and again. No need to look at any others. Fish is next as I have been craving a fish sandwich. Oh. My. Goodness! Delicious doesn’t even begin to describe these. I made the whey protein version but made a couple of small changes: I soaked the chicken in heavily salted water for around three hours before preparing, so I reduced the salt in the breading mix to 1/4 teaspoon and fried them in bacon grease, which I had an abundance of. Even my husband, who doesn’t eat keto loved them.

It also gets the salt penetrating into the meat. Think brining a turkey or chicken for roasting. The strips don’t need nearly as long though.

Okay, Wes, you have never steered us wrong, and this recipe is a home run! I tried it last night, and this chicken came the closest to my late mama's southern fried chicken! Mama's chicken was loved by so many people, and this really was the closest! I used the whey protein powder and lard. Delicious!

Slightly wrong on the oat fiber... I've gone through 5 lbs in a year! I do experimenting and I always sub part of the coconut or almond flour with oat fiber cuz it works so well! 🙂

Thank you!!! I did the pork rinds fried chicken in a Ninja 9 in 1 air crisper. I soaked them in “buttermilk” (heavy cream, unsweetened coconut milk & vinegar)and seasonings, then your pork/ parm cheese coating directly on the chicken. I ran out of spray oil but didn’t need it. My husband loved them. Glad you gave the tip about the air crisp, it gave me the confidence to try it. Also I did fresh shredded cheese since all I had was a hunk of parm cheese in the fridge. Love your Flo painting, she. Was awesome.

I know when the fist goes to the forehead and the other hand comes up to the camera, it's a recipe I am definitely going to make! So, I switched to Keto 10 days ago (I did a lazy version last year but still lost 12kg) and it's been going really well. I also gave up smoking/vaping and drinking... so it's been quite a week! Feel better for it, but I knew come payday I'd be craving some KFC. Alas, I tried this out! I couldn't get my hands on oat fibre, so had to use ground almonds (basically almond flour) and lard > avo oil and I also used the full KFC seasoning list. I put them in the fridge for 15 mins or so as Cheryl suggested and it did seem to help, though a couple did slightly fall apart while devouring them, so I've chucked some oat fibre in my Amazon basket for next time! I have to say - and I don't know if they're different in the UK - but the Pork Scratchings were a little overbearing. You could definitely taste them, even though I put a lot of KFC spice mix in both the almond flour and the crushed rinds it struggled to come through the pork flavour. I wanted the Hot Wings kind of texture rather than original recipe, so I didn't grind the rings particularly finely. Wonder if that made a difference? Either way, I'm glad I tried, my KFC craving is gone and it feels like I've cheated without cheating (Halloumi fries ftw)! A big thanks for the channel, Wes! I rarely subscribe, but your channel has been a great watch over the past two weeks and no doubt beyond. EDIT: Think I've worked out why the rinds were so overwhelming. I used a full on KFC spice mix, which contains a lot of garlic salt, as well as celery salt and pink salt. I guess combined with the salt in the rinds, I ended up with exactly what you warned about! Doh!

I tossed my tenders with baking powder to coat then tried the pork rinds coating. Baking powder crisps up well, very light, adheres perfectly...oh you must try. Have not tried oat fiber bc I didn't have any, so I tried baking powder bc same light consistency. Delicious!

I’ve been making chicken tenders this past month and they taste better than regular breaded ones, I dust them in coconut flour, egg wash, pork bread crumbs. I found they come out best in oven but by using broil, doing them in regular oven bake dries the chicken too much when u cook it enough to make it crunchy, so I broil them on one side, flip and broil other side. There is a decent amount of oil that comes out of pork crumbs so it basically not only fries it and makes it crunchy, it gives the chicken a slight flavor of being fried in animal lard malign it even more amazing which u don’t get when u fry it. I eat them with a mayo sugar free ketchup mix.

I have used it even made bread with it ,turned out well by adding oat fiber and vital wheat gluten with it.I got a little discouraged when I learned that it can cause inflammation in the body

Wes, your pie pan tip is Genius! I wish I had thought of it much earlier. A friend and I are seniors, and cooking a long time. This is MUCH better than a plate. I'm vegetarian, and might try this with vege chicken. The tip for the Oat Fiber dredging is a game changer. It adds a lot more fave recipes back into rotation. I'm glad I listened, even after hearing about the pork rinds, Besides, your videos are so fun!

Flo made the show didn't she? Love the art work and I love grits. My Granny and Papaw showed me how to love grits....butter, salt and pepper. I rarely eat grits anymore due to a low carb lifestyle. When i was pregnant, some 20 odd years ago, i craved grits and sometimes still do. They are so comforting to me because they remind me of them. Both of these look delicious. I tend to prefer chicken tenders with some extra crunch, so the pork rinds version is what I would likely use for them. However, I also (on occasion) like some battered fried fish. I think the lighter whey protein version would be perfect for a fish fry. PS: I am going to need a larger kitchen. Cooking in my extremely tiny kitchen is tough, due to a severe lack of counter space.

@@HighfalutinLowCarb Honestly, my very favorite is just the Great Value brand from Walmart, but lately I am having a hard time finding them. Next favorite would be Mac's. My dad always buys me the Bakenets. I don't like Aldi pork rinds for snacking because they remind me of packing peanuts, but I do like to use them for breading and making pizza crust with the green can Parmesan. In one of the low carb groups a few years ago I was known as the pork rind queen because I loved coming up with different ways to use them. I love making salted caramel pork rind cereal and I use the pizza crust recipe to wrap around hot dogs and either bake or fry them for "corn dogs".

I've just discovered Southern Recipe Small Batch pork rinds--they've really taken pork rinds up a notch for me! Super light and crispy, and they stay fresh for a long time even after the bag is opened.

Hi Wes, I ground a mixture of almonds, pecans & walnuts in the food processor & use that for breading. I’m usually mix them with cheese ( not the green can ) Italian seasoning, salt pepper. It’s good.

Just to give you some perspective, they built a Popeyes in easy golf cart range. Like go 2 blocks, head out the park gate, turn right and here we are. Not a lot of sidewalks and it’s a hundred degrees. Maybe I can do this Sunday since it’s when I would be most likely to go

Soak your chicken overnight in buttermilk and it helps make the chicken so tender. I don’t fry chicken wings anymore without the 24 hour plus soak. My chicken wings I just season with whatever I have I. Spices and sounds good at the time. My 3 littles 9,7 and 4 kill some wings. I also use the air fryer to fry them. In am air fryer I found you can bread the chicken but it needs to sit in the fryer for about 39 minutes and the coating doesn’t come off.

You rock!! I really enjoy your videos, and you share so much valuable information in all of them. This one is a must. I have been missing crispy, crunchy, deep fried stuff and now I have my go-to!! I've been Keto for 2 1/2 years, did Atkins about 10 years ago for about a year, but backslid. Thank goodness with Keto becoming so popular there are many more options (sugars, alternative flours, etc.) for people the get the flavors and mouth feel they grew up with. I have now made it my lifestyle. The first time I used this I didn't have chicken, but I had a very large ling cod filet in my freezer that needed to get eaten. I thawed it out, sliced it into fish stick sizes, and began the breading. I used both the whey protein and the crushed pork rinds separately. The whey protein produced a more fish sandwich breading, tender with a little crunch, and the pork rinds gave the perfect fish stick crunchy finish. Even my husband liked them, and he's scared to death of my keto cooking - he's not one for change. Tonight I made steak fingers with this. This time I mixed the whey protein and pork rinds together, half of each. It worked out perfectly! Thank you so much! Hmmm...maybe someday I'll actually make chicken with this.

I made "breaded" boneless pork chops and used almond flour to dredge the chops before deep frying them. Turned out delicious!
