Low Carb Blackberry Sherbet
2 cans Zevia Sparkling Water - Blackberry, divided
1 tsp. unflavored gelatin
1 cup frozen unsweetened blackberries
1 Tblsp. lemon juice
1/2 tsp. liquid stevia drops
1 cup heavy whipping cream
1. Mix 1 tsp unflavored gelatin with 3 tsp. of Zevia Blackberry water in a small bowl and allow to bloom.
2. In a microwave-safe bowl, mix 1 cup of frozen unsweetened blackberries with 1/2 cup of Zevia Blackberry Water and microwave for 4 minutes.
3. Strain the berry mixture in a fine-mesh sieve to remove seeds and pulp. You should have about 1 cup of blackberry liquid.
4. Add the gelatin mixture to the warm blackberry liquid and whisk to combine.
5. Add lemon juice, heavy whipping cream and 1.5 cups of Zevia Blackberry Water to the bowl and whisk well to combine.
6. Turn on your ice cream maker and carefully add the sherbet mixture. Allow to freeze for 20 - 30 minutes.
7. Transfer to a plastic freezer-safe container and freeze.
8. Serve and enjoy!

Another tip if you dont have ice cream maker, is to pour into a zip lock bag, double bag it and place in freezer, every 20 mins or so, take bag and squish it with hands and put bag in freezer, keep doing till its ready to serve.

Watched this video last night. This morning I went on LET GO and found a practically brand new Cuisinart Ice Cream Maker like the one you are using for $10. Came back from picking it up and added 12 large radishes to my Braised Beef Short Ribs instead of potatoes. The ribs and the radishes were awesome. My wife couldn't believe they were radishes when I told her. We both love them and are sitting at the table eating our Blackberry SHERBERT discussing all of the ways we are going to try the radishes fried, boiled, baked etc. like potatoes. My son is a seriously picky eater. He has extreme sensory issues and does not like any fruits or veggies. I've tried everything to hide fruits and veggies in foods and nothing has worked. It's all about texture, and nothing I made had the right texture. I was inspired by this dish. I made whipped cream and flavored it with blue raspberry sugar free syrup. Then I made a base of baby food apple and avocado. Then I put some cotton candy flavored go-gurt in and blended it with 1% milk. I added a little black berry reduction and vanilla extract. Blended it up and froze it. Something with fruits and veggies that my super picky eater will eat! Thank you for the inspiration!

Mine is done and it's amazing. I used the juice of a whole lemon and kept the berry pulp in too. I had to do mixed berry because my store was out of blackberry. It worked out well though. I didn't even need any sweetener. I call it mixed berry Lemonade sherbet.

I've been known to throw some semi-thawed frozen raspberries, some thickened cream, some granular Swerve, along with some rosewater & vanilla into a bowl, blitz it up with a stick mixer, and voila - instant sherbet (no "R" for this aussie)! It's important to use granular rather than powdered sweetener for texture in my instant sherbet, too. But I'll definitely give your sherbeRt a whirl!
