Hot & Spicy Pork Rinds (regular work just fine, too) 1 (eight oz.) package cream cheese, softened 8 eggs 1/3 cup water 1 tablespoon granulated garlic 1 tablespoon ground cumin Method: 1. Place pork rinds into a food processor and blitz for about 10 seconds, until they are dust. 2. Add all other ingredients to food processor and blitz for about 45 more seconds. I've made these and they're so good! They're good plain, even dipped in a little marinara is good too, but played around with it and made another batch. I added some corn extract, and a little minced onion and garlic powder. Pretty good!

I wonder if doing a 50/50 blend of Victoria's keto flour and parm cheese with the egg whites would give you a less salty less cheesy but wholly satisfying hush puppy. Worth a shot? Or maybe a 1/3 each of parm, VKF & straight coarse almond flour (like Aldi's) would give a more cornmeal like texture (with egg white as the binder).

These fried beautifully, but to me they tasted like hot parmesan cheese. They were good if you are big into parmesan. However, the crispy crust on the outside was outstanding. I found myself digging the filling out and eating the crispy shell. Now I think I need to try frying something with parmesan and egg whites as the breading.

These sounded so interesting that I made a 1/2 batch of the original recipe with a bit of garlic powder added while watching the video. (That’s all the Parmesan I had that was already grated 🥴) I have had hush puppies before, years ago, and can’t say that the texture was right. However, as I finish writing this, I am also finishing (eating, that is) off the Parmesan pearls. Absolutely love them! Thanks so much for this recipe. So easy, even frying in oil though I do plan on trying it with the air fryer. I did use Parmesan that had potato starch as an anti caking agent, so there was no problem of the egg white not being absorbed. I usually use 100% cheese in recipes so I will be experimenting with additional acceptable ingredients to take up the egg whites. Thanks again for a recipe I would have missed as I don’t pay attention to TikTok nor Instagram.

Wes - take your hero bread ends, dry them, pulverize them, then add them to your cheese / egg mix - that will get them to be more bread-like.

I line Airfryer with parchment paper (crumple to make it more placeable) to avoid contact with toxic non stick coating. Possibly not stick to pan either. I wonder if reducing cheese and adding pork rind powder would make difference?

All wood is cellulose, but not all cellulose is wood. That being said, the Keebler rice crispy treats literally puts saw dust in to the treats. For the canned parmesan ch eese, it might be a different cellulose. Also, that cheese is completely dry, add the cellulose to that and it essentially acts like a flour.

Thank you, Wes! I'm definitely making these for a snack tonight when I watch a movie. I think I'll make a batch with your recipe minus the corn extract and replacing the parsley with dried basil or oregano or Italian seasoning. I plan to dip them in marinara as you suggested. I'll also try a small batch with some Victoria's keto flour (bamboo fiber version) added to your recipe using the parsley and adding a little pork panko for the grittiness of cornmeal (but not so much they taste of pork rinds). Hoping they come out more like hush puppies. 🤞🏻🤞🏻
