In relation to the hot sauce. Are there many hot and spicy dishes that are common travel and restaurant foods? I haven't really seen them on the channel so far.

I believe most Japanese dishes are not spicy themselves but instead we usually rely on spicy spices such as wasabi, chili pepper, chili oil and so on. For example, we have regular miso ramen and spicy miso ramen and a lot of chili oil is put in the spicy one.
