This is behind the counter at Japan Okonomiyaki restaurant in Tokyo. Today, we’re going to a Tokyo hidden gem family owned, father and son Okonomiyaki Teppanyaki restaurant, called Saya in Sendagaya Tokyo. The restaurant was opened 27 years ago, and Yusuke, the owner’s son, runs the shop these days with plans to carry on the family business in the future. In the morning he first prepares the Osakayaki, an osaka style okonomiyaki which takes about 30 minutes to cook. It’s a popular dish that many customers order so he starts cooking it in advance to minimize customer wait times. Okonomiyaki itself is a Japanese-style pancake. It’s usually made with flour, eggs, yam, cabbage, and any other proteins as one prefers and it’s often flavored with dashi. It’s eaten as a meal or snack in Japan. It appears simple and easy enough to make but even slight differences in how it’s cooked and the ratio of the ingredients used can quickly yield an inconsistent dish. Only a true chef can create a consistent okonomiyaki that their customers can come to enjoy time after time. And hence why each okonomiyaki restaurant is unique in itself.

I find it very cute that all the workers dressed like they work in a yoshoku restaurant. Most of the time when going to an okonomiyaki restaurant, the chefs go for the a lighter dress (t-shirt, happi coat, apron and hairband). It can get quite warm near the plates! Okonomiyaki is usually considered 'junk food' so this is different.

Everyone is so good looking! Even the dad is so fashionable! Since Yousuke used to be a drummer, he can multitask very well by cooking several okonomiyaki at the same time. Keep this series going!

Haha! I also noticed on how good looking they are, just like a restaurant from romance manga or anime such as Tokyo Mew Mew, and so on. I've just imagined that Yusuke will meet his wife at the restaurant, a woman who really loves Okonomyaki.

For real. I'm not a culinary student, but I've worked cooking in multiple different restaurants. I've also done a couple of other types of labor, but nothing has made me as tired as working in the restaurant industry. I fully believe it takes a special type of person that can work in one for a month and then decide "Yeah this is awesome I wanna keep doing it!"

Culinary is hard, the hardest though is for sure landscaping. They are pretty similar in terms of having to work on your feet, just a lot more lifting in yard work.@@saitodosan9377

Its interesting how the son's owner casually mentions about their previous staff/s starting their own businesses after they learned from the restaurant. No sign of competitions or anything which i think attracts more positive vibes for the restaurant. Good job! I'd like to visit your shop in the future 😊

In Japan its quite common for shop owners to take in apprentices to learn their craft and then open up their own business... I find it really beautiful. It shows that they treat their employees like a real human being and not simply a worker to bring only profit to them.

i heard its a pretty common thing in Japan. Like it's more of a reputable thing, if your employees leave to open up a successful business. I guess it means the owner and restaurant, were doing a really good job, and the worker picked up a lot of good skills.

@@Aeybiseediy You believe in a business only one side benefits? The business is offering a job, they pay you, and in exchange you provide your labor. A business owner has liability and responsibilities that an employee does not have. Nothing one sided about that. Also, while a business can exist without employees, for example, a small business owner doing landscaping, you can't have jobs without a business creating one in its expansion.

@@LastBastion in the US it's frowned upon and might even get you fired if you mention it. i was working for a locksmith company once and before being hired i had to sign a contract saying i wouldn't open my own locksmithing company within a certain radius of the one i was working for if i ever left the business.

I just love how you weave the story behind the owner and the staff into these shows in addition to showcase the food and the place itself. Most other Japan food channels almost exclusively showcase the food, but the best part of your video is how you humanize the place and makes it super interesting.

That's almost why I prefer small mom and pop type of places. They are usually smaller so you get to chat with people's a little bit more. I get my morning latte from a lady who runs a coffee stand at a gas station. It's half the price of the same thing at Starbucks and just as good to me. It's nice chatting, and sharing pictures of our animals and stuff like that. Plus getting it from a place like that has other benefits. For example if I forgot to take cash out, since she doesn't do debit, she will still make me a coffee and I will just pay her double the next day.

Love this. The owner father walks out for 1 second and immediately screams strong artistic vibe. Must be a great business owner as well. The son should have no problem getting a girlfriend with his face and smile. The lunch looks great also. Makes me really want to try the VIP dinner.

Okonomiyaki has always been my favorite Japanese ‘shomin-ryori’ (庶民料理, or ‘common people’s food’.) Fast, cheap, and actually decently well-balanced food since there’s a ton of cabbage it. It’s also customizable, since you can fairly easily swap out one ingredient for another, so it’s good for vegetarians…as long as you’re not too picky about fish-based ‘dashi’ in the mix. Oh, and it’s good with beer. 🍻

I see no reason that the Osaka style takes 30 minutes to cook as it is mostly two layers, the Hiroshima style takes longer as it is layered separate. As for vegan that could be tough as both use egg as a batter, and Hiroshima has the additional fried egg layer. As much as I enjoyed Osaka okonomiyaki, the Hiroshima with clams was amazing and the eateries were much livelier with Toyo Carp paraphernalia and team member pictures all over the small places, along with games on TVs .

@@AcridWhistle Yeah that doesn’t really make sense to me either. I think it only takes about 10 or 15 minutes at my local place. As for customizing to make it vegan, that could be tricky. (I have a feeling that a web search might turn up a solution, but not something we could request at a typical restaurant.)

I don’t know if it’s a requirement, but Paolo seems to always find the most charming/interesting people to interview. Do you have a casting call? Having a boss that looks so suave, the pressure to look as suave and expensive must be high. These family owned shops are something I marvel at, several generations having the same passion and deciding to continue their family legacy.

Does Japan have surprise health inspections like USA and Canada? The son is a very organized chef … very talented and I m so impressed with the constant clean as you go ethic.

Generally speaking, surprise inspections are rare--usually only when triggered by a specific complaint from a customer. Restaurants like this with an open cooking area tend to be more conscientious about cleaning and hygiene, but occasionally older restaurants--mom-and-pop places--can be remarkably filthy. (I remember working in a ramen shop in Waikiki decades ago and getting dinged by the health inspector just for leaving the ice scoop in the ice machine...) And Japan hasn't instituted any kind of health department public rating system for restaurants like some cities in the U.S. have done.

From what gather from a different documentary all restaurants get a twice a year major multiple inspection(each for Fire safety, water and sewage check, food safety, pest and insects check, restaurant staff safety test) to get a renewal. Then there's monthly casual sanitation inspection.

IN JAPAN "THERE IS NO SURPRISE VISIT AS in Canada when it comes to health department official visit to any food retail stores, hair dressers,etc... and any businesses dealing with people physical contacts ( please check the "CITY OF TORONTO HEALTH DEPARTMENT INSPECTIONS) and it is quite amazing about the power they have to keep you open or shut you down and FINES.ANY business HAVE to display sign "on their store front window with pass green, orange under scrutiny/fines, red you are close, how do I know,32 years in business.I used to know a small French bakery " IN TAKAYAMA JAPAN(my favorite city in Japan) called " NICOLAS BAKERY " parallel street to the JR STATION 5/7 MNS WALK away and the owner told me ,back then they get a letter at least with 2 weeks notice " so you will never get red handed, this bakery is gone may be 10 years ago or more, another baker took over
