For this recipe, you will need:
🔸 For Acorn Jelly:
- 1 cup Acorn Starch
- 6 cups Water
- 2 tsp Salt
- 2 tsp Sesame Oil
🔸 For Salad:
- 2 Persian Cucumbers, thinly sliced
- 6 leaves red-leaf lettuce, cut into bite-sized pieces
- 4 Scallions, thinly sliced
- 1 cup sour Kimchi, cut into bite-sized pieces
- 6 sheets Roasted Seaweed, cut into quarter-inch strips
🔸 For Dressing:
- 4 tbsp Sesame Oil
- 2 tbsp Soy Sauce
- 2 tbsp Kimchi Brine
- 2 tsp Rice Vinegar
- 1 tsp Sugar
- 2 cloves Garlic, minced
- 2 tsp Roasted Sesame Seeds
- 2 tsp Gochugaru (Korean Red Pepper Flakes)

I really sympathize with Zauner for the losss of her mother. I have a red cover book 'Crying in H-mart'. There can not be overcoming death of loved one. I am glad to see Zauner doing well.

Haha, so finally H-Mart got back to you! You said in an interview (I think the one with Karen Chee?) that you sent them a letter to their HQ in New Jersey, and they haven't sent you a case and desist LOL. I've usually have 도토리묵 with 깻잎 but not Kimchi, I'm gonna give that a try! Congrats on your book and new album!
