Hoisin Salmon & Broccoli Noodles Chinese Style
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients
4 x 125g salmon fillets, with skin left on
2 Tbsp hoisin sauce
150g cherry tomatoes halved
140g medium egg noodles
200g broccoli, cut into bite-size pieces
½ Tsp coarse black pepper
2 Tbsp dark soy sauce, to serve (optional)
Method
1. Preheat the oven to 220C/200C Fan/Gas 7 and line a small, shallow ovenproof dish with kitchen foil
2. Place the salmon fillets skin side down into the dish and brush generously with the hoisin sauce
3. Scatter the cherry tomatoes around them. Cook in the oven for 15 minutes or until the salmon is cooked through
4. Meanwhile, half-fill a saucepan with water and bring to the boil
5. Add the noodles and cook for 1 minute, stirring to separate the strands
6. Add the broccoli and cook for 3 more minutes, stirring occasionally and then drain
7. Place the noodles and broccoli into a dish, drizzle with the soy sauce
8. Top with the salmon fillets and scatter with the cherry tomatoes. Season with pepper and serve
