When I went to culinary school we got shown the old school way and by the end of the class the chef instructor takes out a vitamix and shows us this method. Mind blown.

I could see myself making some kind of Haute Burger with this sauce. Kaiser roll bun, grassfed beef, caramelized onions with Gruyere melted on top, with Hollandaise in place of Mayo

I’ve always found lemon juice concentrate to be WAY tastier and my Eggs Benedict hollandaise sauce than actual fresh lemon juice. I don’t know why that is, but I love it! You also do not need salt nor hot sauce in hollandaise sauce! In fact, I would say putting that stuff, especially hot sauce, in hollandaise sauce is completely bastarding the recipe and French people would be offended over this recipe!

I would think about doing it in the blender if I was doing a large batch for many people. For just one person (myself), too much of that precious expensive sauce is going to be stuck to the blades and blender to get out, and because you have to drizzle in the butter as it is mixing, you can’t use a small personal size container to make it. That’s a shame. I was really actually looking forward to making this sauce in the blender, but I don’t want to waste any of it. Also, the thought of putting hollandaise sauce on a healthy fresh green salad is really disturbing! LOL.

Aer disc is a power grab joke. The only thing it is good for is to separate the meat from fruits from their rinds like lemons and oranges. Otherwise, the wet blade can do everything that this silly little contraption can do.

The doctors never tell you about the real "C" culprit in heart disease. It isn't too much cholesterol, it is too little Vitamin C. Dr Levy at peakenergy dot com explains it in detail. BTW at 71, I eat all the fat I can and I take no meds, but I do take 5+ grams of C daily.

1 1/2 cups of butter to 6 yolks is WAY too much butter. What a waste! Get it together Vitamix!

You’ve obviously never made this sauce or know what it should be like. Vitamix messed up their recipe in other ways (adding salt and hot sauce), but not the butter being too much. I don’t think you understand just how much butter is normally in the sauce compared to yolks! My recipe that I have used since my childhood which was taught to me by my family calls for two egg yolks and has a full stick of butter in it (8 Tablespoons, aka 1/2 cup of butter). When making a bigger batch, it mathematically works out perfectly to what they are using here.
