Let's can some Boston baked beans. This is my first time ever making homemade baked beans. I love the way they turned out but not thrilled with canning outcome. I followed Ball canning book recipe with a few twist.

I have never done baked beans, but any beans that I have done, fresh, dry or hominy I only fill about 2/3 with beans and cover to 1" head space. They always fill up the jar in processing since they continue to expand. I would also leave the jars in the canner after it finishes to cool longer. I'll leave them in an hour or so. This allows them to cool and the pressure to release some. Hope all our trials and tribulations help!

Did you debubble the jars and wipe the rims down before you put the lids and rings on them? I agree that maybe a larger headspace and more liquid would help. Hey Rachel! My 2020 printed Blue Book says for the oven step: “Drain beans, reserving cooking liquid. Put beans, salt pork, and onions in baking dish. Combine remaining ingredients (brown sugar, salt, dry mustard, molasses) in a large bowl. Stir in 4 cups reserved cooking liquid, adding water to equal 4 cups if needed. Pour sauce over beans; cover dish. Bake at 350* for 3.5 hours. Add water, if needed, to keep beans soupy whole baking.” I’m thinking they might have just needed to have more liquid! This does sound like a yummy recipe though!

I love canned baked beans. Leaving 1 1/2 inch headspace and be sure to debubble, really makes a big difference. It is alot like pie filling. This is only me telling from experience in canning beans with added sugars and par cooked.

I cant wait to do some beans. Just waiting for my new canner to arrive. My ham hocks never look like a. Bone in meaty ham slice with rind. I can only get the ugly hock of the pig & it doesn't have much meat, if any. Alaska grocers suck. They must figure were a captive resident so we get what we get. Oh well. Bacon it is. Lol I love cold baked beans too. 😋 My friend bought me a baked bean pot several years ago. I used my mom's recipe tat had about 1/4 c strong coffee in the liquid. She kept a kettle of water simmering on the stove while the pot was in the oven. Thanks for triggering a 30 yr memory. Happy times we forget about. ❤

Ok if I could do it again I would have filled the jars after 2 hrs if oven baking time, still should be soupy but nicely browned, fill jars 3/4 way with beans/meat and remaining with just the yummy juice. Maybe make up more juice do you have plenty. Think this would have been perfect

The beans looked great when you put the sauce in it. I was thinking how you cannot go wrong with ham hock, onions and carrots 🥕 in the beginning and in the bean broth. One thing that I remember my mom and aunts putting in their baked beans was about 1/4 to 1/2 teaspoon of liquid smoke to the beans.

Had same problem when I made chili con carne. Too dense an item. Under bake beans because they will continue to cook when being canned. Make it soupy too so that it can properly can. The under cooked beans will absorb a lot of thexcess liquid when cooling.

We all do this a time or two. I really like the idea of cooking your onions and hammocks for flavor. Thanks so much for sharing and being real . Your hubby like mine helps in the kitchen, I love seeing that . I haven’t tried this recipe yet. I will def. try this and add more water. Your basics was still good info to follow THANK YOU👍

Agree on cooking the hamhocks beforehand. Drain that grease for sure.

Rachel, I'm making baked beans today and tomorrow, I simmered my ham bones from Easter that still have a bit of meat on them for a couple of hours. Then I added 2 lbs of Northern Beans to that water and set them aside to cool. Put in fridge and will leave over night to soak. Tomorrow is cooking and baking then canning ! I still have meat and will be cooking that with a reserved bit of ham bone to make bean soup to can. Inexpensive just using my left over ham bones. Smells great here! From Dana in Battle Creek. ❤

I've run into issues if there wasn't enough liquid to keep the beans loose. Maybe a touch more liquid and slightly more head space! It's good to see where things go wrong (not just me, not just you)!

That happened to me too with bean soup. I had enough liquid in, but may be need more than an inch. .it did seal though.

Adding a splash of vinegar to your water whenever you pressure cook, helps the keep your jars clean. Especially if there is leakage. They look great. I will try your recipe this week after l can up another 75# of tuna.

Yeah my guess is not enough headspace. I know when I did pie filling, I filled it to where the jar just begins to indent in to allow for it to expand, which it does completely to the top. The beans looked so tasty though! I’m thinking about giving that a try 👍🏼

I am thinking that less cooking time may work better. Perhaps using a slotted spoon to scoop out the beans first so you can put less beans in each jar since they will continue to expand. Then you can ladle sauce to the recommended 1” headspace. Since the beans will continue to cook in the pressure cooker, less cooking will also prevent too much mushing of the beans. I like the extra steps you did to ensure yummy flavors!

Would leave almost a 3 inch head space and in return do broth for extra head space they should be just right

I glad to see you got the video back up. I have never canned Boston Baked beans, but I canned some chili meat sauce and it looked like your beans. It has settled and now no air pockets but I now have about a 2 inch head space. If I remember right they all sealed. I do not like Ball recipes with BBQ sauce or any of the recipe like the baked beans. I do like the way you made your and now I think I will can some baked beans.

I don't know if this makes a difference, but when I was in America (north Queenslander, Australia here) I stayed with a lovely family that made Boston Baked Beans. They didn't use chunks of bacon/ham/pork meat in their recipe but just topped the pot of beans etc with thick strips of pork belly fat. That rendered the yummo pork fat into the recipe and they removed it before serving. Don't know if that affects the canning process.

From Maine and growing up we baked beans Every Saturday Night 😵‍💫. Communities also held Baked Bean Suppers. Mainers Love their beans 🫘. We alway put about 1/2 lb slab of salt pork in our beans prior to putting in the oven.

So sorry you broke your butter dish. I have yet to successfully can any bean except a green bean. Yours look absolutely delicious. I think dried beans just keep soaking liquid - I've tried soaking them oernight, doing the quick soak method, even rogue canning and put them in dry and just covered them with hot water. No matter which way I do it, my beans all end up pretty dry in the jar. So I think yours came out FANTASTIC! :-)

I did Boston baked beans not too long ago and it did the same thing. I put the amount of being sent it I put the amount of water juice whatever you want to call it in it and it still came out dry

Oh Sweetie Girl! I feel your pain on these! I learned my lesson on beans this last summer! Luckily 🤔? It was Pinto Beans and I just redid them to use for Refried Beans! Lol, between the pre-soak and the double canning 🤦🏼‍♀️, all I have to do to use them is basically put then in a pot and heat and stir them with my wooden spoon! Happy accident for me I guess! 😂 I LOVE your rooster apron so much! It's just Beautiful! Was it a local buy for you or can I find one online? I have several that go over my neck ones, but they start to weigh heavy on my neck and hurt! No matter how light they are! 🤷🏼‍♀️ Anyway, I'll hush for now, and I hope you and Todd have a Happy, Healthy and Prosperous 2021! Take Care! Oh! Mine did the same thing. They all sealed. I had the same issue with my ham and Split pea soup.. It may be an issue with the pork fat. Just a thought. on my 2nd attempt, I used navy beans instead and they are so much better.

A 2nd update? When I canned mine, I baked until just tender & made sure they were on the thinner side. They turned out perfect.

I would be interested in seeing how the beans held up after processing. The close up of the jar showing the air pockets almost look like the beans had mushed up or collapsed leaving the air pocket. I have baked beans on my list of things to can so am really interested in how these turned out. They look delicious, which is what I am looking for. Something that has the entire taste profile right out of the jar. Previous baked beans that I have canned, I use just a simple basic recipe and then add most of the sugar/molasses etc once we open them.

Does Salt make your beans hard? Always thought you were to add salt at the very end of the cooking process???? Thanks

I'm canning as we speak I'm making dog food, with leftover deer meat and vegetables scraps from this summer and it got a little too thick and I was wondering about the thickness because I have to can it for 1 1/2 hours. So after seeing your video I'm definitely going to make it more running. I'm guessing the bean where to thick to begin with. And there absorb more because of the cooking time??

Beans are tricky. It depends on the type and age of the beans. I never fill the jars more than half full with beans. They always absorb the liquid. I'd rather have a bit more liquid rather than dry beans.

A little bit of work but probably much better tasting than any store bought baked beans. I didn't see you wipe the rim of the jars. There could have been some sauce residue on the rim of the jar. I love baked beans so I will probably try this recipe. Thanks for sharing. Oh yes, sorry about your butter dish.

Wow, that is a really meaty ham hock. The ones I get are just bone with tiny bits of meat clinging onto it. I love baked beans, wish it loved me back. I don't quite cook mine for as long since they will be cooking in the canner as well. I might need to pull out a jar after watching this.
