Once you know the ins and outs of canning safety, it’s really easy to determine what is safe. I modify all of our favorite recipes we used to freeze, to be able to safely can. Love this!

I am so glad you mentioned being able to smell your stuff while it was in the canner. That has been my biggest question when pressure canning because after watching a lot of how to pressure can videos I have never once heard anyone say they could smell it. I always thought I was doing something wrong!! I think that veteran pressure canners don’t think about all the little details that happen ‘during’ the canning period. Usually only the before and after. Thanks again! 😊

I love that you are canning "untested" recipes. Having to stick to a recipe while canning has been tough. It 's nice to see someone canning different stuff, and makes me feel that I can start canning some other stuff as well.

I made a split pea soup, and I couldn't find anywhere if I could blend all the other veggies in it as well. I just did it. So now seeing you make a split pea/carrot soup, makes me feel like I did the right thing.

It really is good to encourage creativity in the kitchen, and using your own common sense when altering recipes to suit your taste - that is the basis of good cooking! This looks like a great recipe, along with a hot sandwich of some sort (grilled cheese maybe) for a hearty winter meal.

I love watching you think on your feet and adding things. I just got into canning this past June and I love it. I was so scared to pressure can and now I do it all the time. I have been doing what you said adding my own spin on food. I have adding so much to my pantry. I just wanted to thank you for helping encourage me. If you have any low carb canning videos I would love to know. I try to stay keto. But that carrot soup sounds amazing. I will have to look that one up in my ball book. Thanks again. God bless you and your family.
